I stumbled upon the loaf version of the recipe about a years ago and it's been my go-to loaf recipe ever since. I absolutely LOVE it and now I can try another variation. Thank you so much!
It's quite possible you had diabetic induced tendonitis. Even if you're not full on diabetic, you could have had pre-diabetes possibly without knowing it, and that could have affected your tendons. And when you cut out the carbs, it fixed your blood sugar, which in turn reduced inflammation in your tendons.
@@GeorgeParaskeva Flax is essential for locking in the right amount of moisture. You can replace with ground Chia and it will look right, rise perfectly but taste dry.
Just pulled these out of the oven. They were easy to make, and did rise (though I let rise longer), and browned quite nicely. I used convection oven on 400, 17 minutes. I have been baking sourdough for over 30 years, and giving up bread was a very hard thing. It’s a real joy to bake bread again! Thank you!!

This is the wrong mindset. Substituting everything with something "Keto". Gluten is bad for gut and overall health. Keto is an anti inflammatory diet for a start, done with Keto breads, cookies, pasta and cakes it is not the "elimination diet" it should be.
Here is my experience. Kneaded it by hand for 8 minutes. Rolled into a long enough "log" for my 13 inch loaf pan. Let rise 90 minutes. It barely doubled in size. Didnt have a sprayer so moistened top with wet fingers. Cut slashes in top. Put a pan of water in the oven. Baked at 400 for 45 mins. The bread didn't rise enough to open up the slashes. I was ok with all of this because one slice tasted great and only raised my blood sugar by 14 points at the peak. Thanks for a great recipe Mary! 🥰
I've been keto for years, low carb and low net carbs aren't the samething. You'll get a glucose response from it for sure but super cool and a great way to splurge once in awhile
I just made this & tested one. Butter only. 😳 I'm completely amazed and can't thank you enough. Tastes like a hoagie roll from the bakery! I read where some are having trouble with the rise. Maybe this will help: Turn on the light under the microwave. Heat 2 cups of water to a boil then remove & put your buns in for 90 minutes. The trapped humidity & low warmth from the light is perfect. Just ate my first one! UH-MAZING! I didn't have the baguette pans or golden flax, so I did the round rolls with regular flax, but these are by far the best vegan keto bread I've made. So happy!😃
@@marystestkitchen I do like the idea ,dont get me wrong ,I only research I also had the vital gluten but never could use it .I was still using gluten I'm on low carb diet not keto ,but your recipe I will change that powder with China and psyllium, but i will use all the rest with monk fruit sweetner, olive oil,one egg to enhance protein,plus ACV.
I meant I was doing sourdough with wheat flour but I was still having pain even though bearable, but now so far after long fast and only gluten free bread no pain.

Hey guys so for anyone who’s wondering, I tested this bread and it’s the real deal. Firstly if you follow the method and measurements it is basically fool proof. Secondly, it doesn’t spike your glucose AT ALL. So I’m insulin resistant and I do have a CGM. When I eat some carbs it takes at least 6-9 hrs to go back to baseline, it is the worse feeling ever. I literally have to NOT eat carbs to have a good day. Anyway, I went all in and after baking these bread I had 2 loaves with tuna. Guess what! My glucose went up to 92 mg/dL and my base line was 84 before I eat. Two hours later it’s back to 83. This didn’t raise my glucose and the best part is I feel like I can have a little cheat day but it’s not even a cheat cause it’s still like no carbs! Guys this bread is the real deal. It is keto friendly. 😊

You SHOULD be proud of yourself, Mary, these look amazing! I'll definitely give them a whirl, just gotta get some oat fiber. I'll cosign and say that I also recommend Anthony's, I use their gigantic pouch-o-vital wheat gluten for my protein mug cakes and the quality is great. I'd love to see if you develop a chewy, Greek style pita a la low-carb and high protein. I've used the recipe from Aki's Kitchen "Pita for Souvlaki" for years and it is amazing. I got it to half whole wheat and use soy milk instead of milk, of course, and always make a triple batch cause they freeze beautifully. I wonder if a few swaps would be easy here? It would be great to have a reliable recipe so I don't get tempted to be lazy and buy the Joseph's brand oat and flax ones - who needs to spend extra money and incur more plastic packaging? Hi Mary, I would love to see low carb versions of german pretzels and bagels. And btw, you can replace gluten with bamboo fiber. I bake low carb cinamon rolls using almond flour (NOT ground almonds!), bamboo fibre and finaly ground psyllium husk. They are absolutely great.
I make the Keto King version of this in my bread maker. It’s not rolls, but it smells so good and yeasty and it’s such a treat to cut a piece off and slather it with peanut butter yum 🤤 DEFINITELY drink extra water

So cool, I came for the high protein. I’ve never baked bread but the amount of protein in each roll has me eager to try. Would love to see more high protein content.
High protein in the form of wheat gluten? Not the kind of protein I would be looking for. I do gluten-free baking as gluten can be inflammatory to the gut so why would I want to load up on this? Even though this is lower carb than regular wheat bread, I would rather eat regular bread, very occasionally, than loading up on low carb that's way too much in wheat gluten.

This is so awesome! My dad has type 1 diabetes and he wants to eat vegan with me but struggles to avoid carbs. It's not a problem I ever had to solve, so I was totally stuck on how to help. This recipe is wonderful so we can still have soup with rye bread or buffalo soy curl sammies (his favorite) without putting him in danger.

@@eyeYQ2 I appreciate your concern. Ihave a conventional primary doctor and am healthy physically and on paper/bloodwork. I personally have been vegan for 11 years, so my understanding is solid. My father is not vegan, but also seeing his primary doctor for care and does very well when he visits me and eats with me (stays steady 80 blood sugar via his meter). He is receiving great care, but does miss eating crusty artisan bread, so this video was a great find. He is excited as I told him about it this past weekend.

Hi Mary! I'm very grateful you taught me this recipe. Best low carb bread ever!! Because oat fiber is very expensive here I used half oat fiber half oat bran. And I used 80g of grounded flaxseeds plus 1ts of psyllium to take out a bit of that flax seed taste, which I dont like very much. Still a very very low carb bread that tastes like bread. WOW! it really DOES taste like bread! It's similar to an artisan grain bread, but beautifully fluffy. I was skeptical, but again WOW. It was also very easy!🥳🥳🥳
Your recipe looks great, I've been making breads using oat fiber, vital wheat glutten, and Golden Flax Seed for 2 years, the closest I get to a baguette is adding a TBS of Beef Gelelatin to the mix before adding my wet ingredients. It toughens up the crust and gives it a more pully like texture, still playing with it and some other ingredients to achieve the perfect Argentinian Bread.
Not sure if anyone else mentioned donuts, but I have yet to find a good low carb, vegan one. Would love to see you try it. Oh, and I'll be making these for sure, they look great!!
I have made another version of this, which included eggs and butter. Also used lupin flour instead of flax or substituted half (lupin is expensive if you are making bread regularly) This seems easier, looks lovely and I loved the way you walked us through. Subscribed !
Sorry, this recipe can't be gluten-free. However, check out Heavenly Fan's videos. I saw she had some buns without gluten. I haven't tried those recipes but they look good :-)
You can use guar gum. I like to mix it with ground flax and chia. It doesn't fully replace the gluten but is still pretty good. Now what can I use to replace the oat fiber?

Doing low-carb a lot because I got diagnosed as pre-diabetic. Keto stuff has been heaven-sent, even though I myself don't believe in diets (They make you gain the weight back), so this sounds great. I got a bunch of yeast, thinking keto-style pizza doughs needed it, so this will be a great place to use it before it goes south. I'm 50/50 on wheat bread, because I got into that good Italian white bread before my diagnosis, and the only kind of wheat bread I REALLY love is from Subway. I'm not a big sandwich person, but this bread might be versatile enough for all kinds of things. Thank you for sharing!

This is nonsense, it basically means getting rid of carbohydrates AND the gluten proteins, so you just left with fiber, without any synthetic additives you will never get bread, you just get a sticky mousse

OMG!!! I just made it and its amazing! I followed everything step by step. The only issue I had-maybe my oven was stronger, the 30 mins was a bit to much. Next time I will do maybe 25 mins. Thanks so much!!!

In my region we have a supermarket called Mariano's. They have a 12 grain bread that is really good and supposedly it complies with Keto directives. If you could get that recipe, it would be amazing. On this recipe in this video the sole thing that I changed it was the water that I sprayed atop of the dough. The water that I used was salted and it turned out really good. Thanks for the recipe!!!!

This looks very interesting and I shall try it with my potato fiber. Amazon here in Spain does not have the oat fiber...but it should be quite similar result.
@@marystestkitchen Supposedly it can be an equal substitute for oat fiber. The company I order from is in Germany (potatoes...of course). I am German but now Swiss.
Try putting a tray or small basin with hot water in this helps the crust to go crispy. I make something similar but with egg as well I will give these a go they look delicious . My recipe with the egg I make in a bread machine.
I just made these. I don't have a stand mixer, so I mixed the ingredients by hand and needed it as much as my patience allowed. I had to toss out my first attempt because I mixed the vital wheat gluten in the warm yeasty water before having my other ingredients ready. It created a tough stringy dough that made it nearly impossible to mix-in the other ingredients by hand. I didn't have oat fiber, so I used some whole psyllium husks that I pulsed in my nutribulet with the milling blade. I was nervous, because my dough did not look nearly as good. It had lots of cracks and folds that I could not press together. Though not as pretty as the ones on the video, my rolls turned out quite nice with a fluffy interior and crunchy exterior.

Hey guys so for anyone who’s wondering, I tested this bread and it’s the real deal. Firstly if you follow the method and measurements it is basically fool proof. Secondly, it doesn’t spike your glucose AT ALL. So I’m insulin resistant and I do have a CGM. When I eat some carbs it takes at least 6-9 hrs to go back to baseline, it is the worse feeling ever. I literally have to NOT eat carbs to have a good day. Anyway, I went all in and after baking these bread I had 2 loaves with tuna. Guess what! My glucose went up to 92 mg/dL and my base line was 84 before I eat. Two hours later it’s back to 83. This didn’t raise my glucose and the best part is I feel like I can have a little cheat day but it’s not even a cheat cause it’s still like no carbs! Guys this bread is the real deal. It is keto friendly. 😊

I'll cosign and say that I also recommend Anthony's, I use their gigantic pouch-o-vital wheat gluten for my protein mug cakes and the quality is great. I'd love to see if you develop a chewy, Greek style pita a la low-carb and high protein. I've used the recipe from Aki's Kitchen "Pita for Souvlaki" for years and it is amazing. I got it to half whole wheat and use soy milk instead of milk, of course, and always make a triple batch cause they freeze beautifully. I wonder if a few swaps would be easy here? It would be great to have a reliable recipe so I don't get tempted to be lazy and buy the Joseph's brand oat and flax ones - who needs to spend extra money and incur more plastic packaging? Hi Mary, I would love to see low carb versions of german pretzels and bagels. And btw, you can replace gluten with bamboo fiber. I bake low carb cinamon rolls using almond flour (NOT ground almonds!), bamboo fibre and finaly ground psyllium husk. They are absolutely great.

High protein in the form of wheat gluten? Not the kind of protein I would be looking for. I do gluten-free baking as gluten can be inflammatory to the gut so why would I want to load up on this? Even though this is lower carb than regular wheat bread, I would rather eat regular bread, very occasionally, than loading up on low carb that's way too much in wheat gluten.

This is so awesome! My dad has type 1 diabetes and he wants to eat vegan with me but struggles to avoid carbs. It's not a problem I ever had to solve, so I was totally stuck on how to help. This recipe is wonderful so we can still have soup with rye bread or buffalo soy curl sammies (his favorite) without putting him in danger.

@@eyeYQ2 I appreciate your concern. Ihave a conventional primary doctor and am healthy physically and on paper/bloodwork. I personally have been vegan for 11 years, so my understanding is solid. My father is not vegan, but also seeing his primary doctor for care and does very well when he visits me and eats with me (stays steady 80 blood sugar via his meter). He is receiving great care, but does miss eating crusty artisan bread, so this video was a great find. He is excited as I told him about it this past weekend.

Because oat fiber is very expensive here I used half oat fiber half oat bran. And I used 80g of grounded flaxseeds plus 1ts of psyllium to take out a bit of that flax seed taste, which I dont like very much. Still a very very low carb bread that tastes like bread. Thank you so much!

Your recipe looks great, I've been making breads using oat fiber, vital wheat glutten, and Golden Flax Seed for 2 years, the closest I get to a baguette is adding a TBS of Beef Gelelatin to the mix before adding my wet ingredients. It toughens up the crust and gives it a more pully like texture, still playing with it and some other ingredients to achieve the perfect Argentinian Bread.

I have made another version of this, which included eggs and butter. Also used lupin flour instead of flax or substituted half (lupin is expensive if you are making bread regularly)

Sorry, this recipe can't be gluten-free. However, check out Heavenly Fan's videos. I saw she had some buns without gluten. I haven't tried those recipes but they look good :-)
You can use guar gum. I like to mix it with ground flax and chia. It doesn't fully replace the gluten but is still pretty good. Now what can I use to replace the oat fiber?

Doing low-carb a lot because I got diagnosed as pre-diabetic. Keto stuff has been heaven-sent, even though I myself don't believe in diets (They make you gain the weight back), so this sounds great. I got a bunch of yeast, thinking keto-style pizza doughs needed it, so this will be a great place to use it before it goes south. I'm 50/50 on wheat bread, because I got into that good Italian white bread before my diagnosis, and the only kind of wheat bread I REALLY love is from Subway.
I'm not a big sandwich person, but this bread might be versatile enough for all kinds of things. Thank you for sharing!

This is nonsense, it basically means getting rid of carbohydrates AND the gluten proteins, so you just left with fiber, without any synthetic additives you will never get bread, you just get a sticky mousse

In my region we have a supermarket called Mariano's. They have a 12 grain bread that is really good and supposedly it complies with Keto directives. If you could get that recipe, it would be amazing.
On this recipe in this video the sole thing that I changed it was the water that I sprayed atop of the dough. The water that I used was salted and it turned out really good. Thanks for the recipe!!!!

Try putting a tray or small basin with hot water in this helps the crust to go crispy. I make something similar but with egg as well I will give these a go they look delicious . My recipe with the egg I make in a bread machine.
I use that technique for my banh mi recipe but it doesn't quite work the same here.
I just made these. I don't have a stand mixer, so I mixed the ingredients by hand and needed it as much as my patience allowed. I had to toss out my first attempt because I mixed the vital wheat gluten in the warm yeasty water before having my other ingredients ready. It created a tough stringy dough that made it nearly impossible to mix-in the other ingredients by hand. I didn't have oat fiber, so I used some whole psyllium husks that I pulsed in my nutribulet with the milling blade. I was nervous, because my dough did not look nearly as good. It had lots of cracks and folds that I could not press together. Though not as pretty as the ones on the video, my rolls turned out quite nice with a fluffy interior and crunchy exterior.

This is a terrific recipe for low-carb bread. I like to sprinkle the rolls with "Everything But the Bagel" seeds before baking.
