    Lamingtons recipe:
    4 eggs
    2/3 cup (150g) caster sugar
    1 cup (150g) self-raising flour
    1/4 cup (35g) cornflour
    25 gram soft butter, chopped
    1/3 cup (80ml) boiling water
    4 cups (270g) desiccated coconut
    Chocolate icing
    4 2/3 cups (750g) icing sugar mixture
    1/2 cup (50g) cocoa powder
    20 grams soft butter
    3/4 cup (180ml) milk

    Lamingtons
    6 eggs
    2/3 cup (150g) caster sugar
    1/3 cup (50g) cornflour (cornstarch)
    1/2 cup (75g) plain flour
    1/3 cup self-raising flour
    2 cup (160g) desiccated coconut
    Chocolate icing
    3 cup (500g) icing sugar
    1/2 cup (50g) cocoa powder
    15 gram butter, melted
    2/3 cup (160ml) milk

    You don’t need to grease the pan if using parchment baking paper. Much less work to add baking powder.

    The lamington look great, but where's the recipe?
    If I want to make lamingtons and use this recipe, how much flour etc... Is needed? 🤪🤔

    I am not a professional but I just don't see the reason why the baking pan was lined with wax paper, after it was greased with butter and flour. I would appreciate if someone could enlighten me with this. Thank you!

    FUN FACT - like the Pavlova , Lamingtons ARE from Australia, - the story that Lamingtons are a New Zealand creation was an April fools day joke played on New Zealanders by The Guardian Australia,,, look it up !

    I don't like mixed measures, why use grams and cups in the same recipe which can't be found anyway ?

    Lamingtons are much, much nicer if a buttercake recipe is used as the base.

    Sorry but I don’t like to say negative stuff but this recipe is not good I’ve made it following your instruction and they turned out terrible and I’ve been baking for 45 years. For example you didn’t say how much boiling water or the amount of cornflower is used. A definite thumbs down in my opinion and I think you really need to review your recipe.

      Lynny Freeman agree...best way to coat lamingtons is to pour the icing into another flat tray...put 6 in at a time and just flip over, then lift into coconut! Easier than holding soft cake with a fork!

      ME Cruz I have to substitute the plain flour many times as some of the family are gluten free. What I do is substitute cornflour for plain flour, add 1 teaspoon of baking powder, 1/2 teaspoon of bicarbonate soda and 2 tablespoons of custard powder. I do reduce the amount of flour by 2 tablespoons to make up for the custard powder. Also, I never use that amount of water...I would use about 1/4 cup. I also whip up the egg whites with the sugar, then add the yolks....gives a much thicker mix and retains the height better.

      you've been baking for 45yrs and can't make a sponge cake? something fishy going on here, just make a sponge cake cut into large squares, dip in chocolate icing and cover with desicated coconut
