How to make Australian Chocolate Lamingtons

  • Recipe of an Australian chocolate and coconut coated sponge cake sometimes filled with jam. Named after Lord Lamington, history has it that the sponge cake was accidentally dropped in melted chocolate in the government house kitchen, it was then suggested to coat them in coconut to avoid messy fingers. The best recipes are always accidental. Now I know a traditional purist at heart will cringe at the thought of putting jam in the middle of a Lamington. But growing up as a kid in Australia, I always remember the good Lamingtons with jam in the centre, and the boring Lamingtons without jam. So you guessed right, my recipe has jam between the layers, it may not be as authentic, but they taste so much nicer! Enjoy this culinary Australian icon, the great Aussie Lamingtons !

    Yes, true lamingtons are always coated in chocolate icing, not ganache or melted chocolate. Great recipe.

    Being a True Blue Victorian Aussie, its great to see at least one recipe that makes Lamingtons right! That is, with a spread of jam in the centre. According to Standard Recipes: for Industrial Cafaterias and other Large Food Service, published by the Commonwealth of Australia Department of Labour and National Service, 1957 the recommended jam is Raspberry.       Sadly there's no real Australian cuisine, the country is too new, it's all mainly a spin-off on the British food. Native bush tucker, is the real Aussie food :)

    2014 April Fools' Day prank on New Zealanders by "The Guardian Australia"
    Due to an April Fools' Day prank in "The Guardian Australia", on 1 April 2014, written by Olaf Priol (an anagram of April Fool), some people, falsely believed that the lamington was originally a New Zealand cake known as a "Wellington", existing before the Australian lamington. A later article in The Guardian commented that this prank had even fooled Wikipedia.

    I love Lamingtons. I noticed you don't use any raising agent? I know baking powder has aluminium in it, which can be bad for the health although some people debate that. What would you normally use as a raising agent?

      In this case the eggs do all the work. It depends on the recipe to what I use.

      Use a hand balloon whisk and a mixing bowl, no need for a mixer.

    Very good but the measurement for the chocolate coating was off. It came out too thick, had to thin it out. If you could improve that, this is definitely a hit. Thanks chef.

      I don't think it matters my Nanna just used normal butter when she made them , they are little pieces of heaven. Yum . You can make them with a high high sponge and with our the jam

    "New Zealand made the Pavlova recipe and called it the Pavlova. In Australia, the Aussies had a similar recipe to the Pav, it was called a meringue with fruit. New Zealand invented what we know as the Pavlova, and named it after a dancer that toured Australia and New Zealand called Anna Pavlova.       You didn't add butter for making sponge cake, just wanted to clarify will the cake be soft with out butter or oil for baking cake.
