    Oh no thank you so much.... I live in Korea and Cauliflower and cashews are expensive here... I never knew I can make creamy pasta with soy milk. Thank you so much!!! You're like a savior of broke newbies

    Love these recipes! I also make an excellent creamy pasta sauce using white beans and coconut milk! You basically just throw your cooked and drained white beans (I use canned ones) in a blender with full fat coconut milk, minced garlic, onion powder, nutritional yeast, salt, pepper, 1 teaspoon mustard and 1 teaspoon apple cider vinegar. Blend it all up into a smooth cream and then cook in a saucepan on a simmer to reduce slightly and let the flavors really incorporate. I love it because the beans provide lots of protein, and it has an excellent texture!

      Frozen cauliflower is much cheaper where I am so I always use that instead!

      @@ruejohn2653 I make basically the same thing w/ frozen cauliflower. I steam frozen cauliflower until tender, drain put in the blender w/ plain soy milk, garlic & onion (either sauted or use dry powder), nooch, lemon juice, miso or veg broth concentrate; blend till smooth. It's great, and I don't think there is any loss using frozen in this kind of thing.

    I recently made a roasted cauliflower sauce for pasta and it was amazing. If you have time, roasting the cauliflower takes it to another level taste wise. I roasted enough cauliflower to use most of it for the sauce and the rest of it to toss on top of the pasta before serving.

    How about taking the best of everything?
    I'd try the cauliflower recipe but make it one pot pasta, but also add the cashews when blending the cauliflower!

    Thank you for these recipes! I just cooked the one pan soy milk Alfredo, and even though I didn’t have veggie stock it came out so delicious! Instead of veggie stock, I added garlic powder and onion powder.

    I made #2, (flour base), but added sliced grape tomatoes about 2/3 of the way into the cooking process, then spinach leaves about 2 minutes before it was done so it wouldn't be overcooked and I'm telling you.....chef's kiss. I've done it both the normal way and that way, but that makes it so, so much better.

    Such a bomb idea to use the soy milk! I have been buying soy cream from time to time to make such a dish but this is so much less expensive! Very grateful for this idea!

    I tried the cashew one tonight, and it was so good! I've been plant-based for just over a month and a half, and I've finally been able to make something that truly satisfies a cheese craving!
    I'm excited to try the roux one later this week!

    Hiya! New sub and a new vegan here! I absolutely despise cauliflower (makes me gag) but I thought, it'd give this a go and keep an open mind. I've just made the cauliflower sauce and it is DELICIOUS!!! And I am NOT a good cook. Thank you so much for making this journey so much easier for me and sharing these great and simple recipes!

    After I watched this I went right into the kitchen and made the cauliflower version..... OMGOODNESS!!!! SOOOOO F~ GOOD! Even the non vegans in my house went CRAZY over the deliciousness!!!!! I went to work bragging and sharing this! AMAZING!!!!!!

    They all look amazing....going to try! If you hold back a little pasta water (for the first 2 dishes) and add to the dish instead of plain water, you will increase the creaminess of the dish.

    Oh girlllll I just made the cashew one and it was amazeeeee yes I had a bunch of sauce leftover so I’ll make more zucchini noodles tomorrow or freeze it can’t wait to try the others! It’s nice to have options depending on which ingredients you have on hand! Thanks so much 💜💜

    I have not ate Alfredo since going mostly plant-based 😭 I bought a $10 jar of arugula Alfredo pesto sauce which was great but not the same.... I really want some creamy Alfredo sauce that I can eat with Cajun seasoning all over it 😋

    Delicious pasta! The third sauce I've used as a pizza sauce for a veggie pizza. I just cooked it like a bechemel sauce and let it thickened. Poured it on my pizza then topped with caramelized onions, mushrooms, zucchini, spinach, shaved asparagus, chopped marinated artichokes and cooked chopped vegan bacon. Topped with vegan mozzarella cheese and Parmesan if desired. So delicious.

    Well Done Mate! I Love pasta dishes cos i enjoy throwing in extra greens that i dont eat enough of ~ like brocolli & spinach and smothering them in the pasta & sauce! And how HAPPYWONDERFUL is it that your dishes here are THAT creamy but dont contain CREAM! Or BUTTER! Or DAIRY at all! OR FAT ~ save for one recipe using a handful of nuts! Thanks again Rose! As always, youve made it look easy!

    I just made the 3rd one, the roux, and it's super tasty (super close to alfredo!) but there was way too much liquid left. I'd start with 1/2 cup water and add more if needed. Also make sure you cook it uncovered once it's boiling so the extra liquid can evaporate and thicken the sauce

    For a gluten free option with dairy free milk, you can make your sauce without the roux and instead thicken it with cornstarch near the end of the cooking process. When it starts to boil, you'll add 1-2 tbsp cornstarch to a cup, then 1/2 cup VERY COLD liquid (I use more dairy free milk to keep the sauce flavorful). Mix well to combine, then pour the cold liquid into your sauce gradually, stirring the sauce as you pour. If you've done it correctly, you should see the sauce begin to thicken. Keep it boiling and stir until it reaches the desired thickness, then remove from the heat. Cornstarch works for sauces, gravies, and stews that you want to thicken and keep gluten free. I do not recommend one-pot with gluten free pasta and cornstarch sauce until you've got the cornstarch method of thickening correct. You want to boil the pasta in the sauce, THEN thicken it, IME. I hope this helps someone!

    I saw one made from white beans on another channel. It wasn't great when I tried it, but it had the beans which is important. I'm thinking of trying the cauliflower with a little white beans and a little cashews as a mash-up.

    Cashews in my area are like rare diamonds or something because they are sooooo damn expensive and can get it in one store: whole foods. Cauliflower on the other hand is pretty cheap lol

    I made the one pot one with banza linguine and it kind of fused together immediately upon entering the pan (maybe because of the protein in the soy?) so be careful to separate the noodles as you add them if you make it with protein pasta, still ended up tasting great tho!

    I just made both the cauliflower and the cashew recipes and combined them (cooking for 4). The sauces taste great!
    I thought I might try making the noodles in the pot with the sauce like you did for the soy milk version. Have you tried that?

    Weill definitely give the 3rd one a try. Maybe the 1st one if I'm feeling fancy. I usually keep frozen cauliflower, as it is easy to warm up and then stick in the oven to roast (so yummy that way). I'm wondering how frozen cauliflower would work in this though. But cashews are so expensive. Yummy, but expensive.
