Hey, Libby! Great questions! You could cook the lentils in advance but I think that would be an extra step that isn't really necessary. These are split red lentils and by soaking them you are activating the nutrients inside the lentil and removing phytates which block the absorption of nutrients. After the appropriate soaking time they become very soft and cook easily. The baking soda gives it a bit of body while the potato starch helps to hold the lentil meatballs together. I have never tried freezing these before but I imagine you could possibly freeze them before cooking. I hope that helps! ❤️❤️❤️
