I have travelled a lot and i fully agree that greek pies are the most in the world! also it is not so common to bake salted pies. only in russia thay have tradition on salty pies as well.
I swear when you cut that crispy pie I thought I could smell it! So now my mouth is watering and as I have Kalamata olive oil, eggs and sesame seeds in the kitchen I’m half way there already… 🤤
Awesome! so making this. In Australia we always have so much left over ham at Christmas time. Might put some chopped ham in there as well. Some fresh herbs as well. Maybe dill. What do you think?
When I took it out of oven it was drenched & swimming in half a kilo of oil at the bottom of the pan. I did it again lightly brushed the sheets & it was perfect.
I love your greek recipes Akis, and I love cheese, and the pie looks delicious. But 1kg of cheese seems like a really huge amount. How many people does this pie serve ?
Cheese over chocolate, now that's a bold statement. Frankly speaking, I remember as a child that I used to consume feta cheese, especially, more than anything else ha-ha. As for Greek pies, we have the best. Short crust and puff pastry ones can't be as crispy as phyllo, whereas phyllo can also be flaky as these. Plus, heavier fillings are more suited towards phyllo since short crust and puff pastry are already made with butter. What can I say, I am Greek. French claim they have the best cheese, for me feta cheese is above all (any Greek cheese but feta above all). :)
From romania my dear is imposible to find Kaseri chesee, what is the substitute? Looks so delicicious ,thnks for your fantastic recipes which bring me greece in my house
Ok Akis, where did you get the kaseri? In America we haven't had Kaseri in a couple of years. Has it been the same in Greece or anywhere else? Something about a recall or something? I keep asking for it. We don't have a bakalis here anymore where I live. My favourite thing for breakfast is a slice of kaseri with a hard boiled egg. I've been deprived of this for some time now. Gruyere to me does not compare. I don't have to say I will try it because I make it because I'm a Greekie. All our cheese pies and really all our food is the best of the best; no offence to anyone else, but that's how it is.
I live in New England and though costly it’s readily available.Usually a small wheel of several pounds is 22 dollars and change,I’ve always had no problem finding it.Don’t know where you live but I hope you can find some soon.😊
@@steveg8322 I live in the midwest. What store do you buy yours from? Since the Bakalis closed down, I've not seen it as a wheel and let me say that would be exciting! But I'll take it any way I can. Oh and what brand?
@@FriedaBabbley We have a chain of supermarkets,Greek owned called Market Basket that sells good Feta,Kasseri,Haloumi,Kephalograviera etc.Even before MB,we had Greek or Near Eastern markets that sell a variety of imported products.MB also has Greek wines and spirits, ouzo, tsipouro,Mavrodaphne etc.I go through at least a pound of feta and Kasseri a week.I learned from another YT Greek cook that she had to drive hours to acquire Kasseri, so it may be a regional thing as to its availability.Good luck my friend.

I make Kaseropita often, but I make more layers, (phyllo, cheese, phyllo, cheese, phyllo, etcetera) as I like it crispier in the middle. I also use melted unsalted butter with the EVOO.😁

Could we add feta 500 gr and 500g kaseri to that? ...as 1kilo kaseri is expensive here in Ozzie land..😢
Yes, you can! 😀
Thank you so much...❤@@akispetretzikisen
Do prefer putting oil between the phyllo layers instead of melted butter?
Oil is better for this pie! 😉
That pie is almost as cheesy as I am ;) lol

When it says *Kesari* doesn't that mean it's a Turkish thing?
Kaseri is a Greek Cheese not easily available all over Use Gruyere or mild cheese!
