Another wonderful recipe, my guests were very satisfied. I also hid a piece of feta in the middle of the meatballs. I can only speak for myself here (the ovens in professional kitchens are likely to be a bit more powerful than those of amateur cooks), but my potatoes were still very hard, so next time I will blanch them for a few minutes beforehand.
Delicious- one of my favorite things to order in Athens. Akis knows his stuff! You have to have pork and beef!! The pork gives a sweetness and mildness to the meat! Same with moussaka. So many recipes don’t do this. Bravo!! Xx
I love your herb rack - it's so cute! I really need some comfort food. So I think I will try this tonight. The soaked bread kindof freaks me out though. My grandma used to make me cook milk toast for her... ugh! I will just close my eyes. I'm sure it will be delicious once I move past that part. There are no Greek restaurants here - so it is home cooking or nothing. Thank God for Akis!

This was really good. I think it would have cooked better and faster for me in a metal pan than in a ceramic one. But it was fine. I have to say I liked the test pan seared version better. So I think I would cook the potatoes in the oven and the meat in the pan next time. Either way it was yummy!

You can soak the bread in water. Works very nice.

I use a little bit of cornstarch or potato starch... Gives a fluffier texture...
