I made this dish a few days ago and I must say that I caught myself saying to my girlfriend; look at this, the most delishious lasagna you will ever try, it's a-ma-zing. She fully agreed and knew that it was an Akis recipe. And yes Akis never lies about flavour.

If anyone hasn’t considered making a lasagna with dry sheets (and a more runny sauce) - just try it. It actually makes it so much better, because rather than water, the pasta sheets are full of sauce liquid! It’s my trick to making an amazing lasagna every time! I prefer Béchamels to other fillings like ricotta as well, it’s smoother, tastier and not as greasy. I always judge chefs on their lasagna recipe and you pass with flying colors Akis!

@cameraman, please show more often whats inside Akis pots! Didnt see nothing from the consistence of the bechamel sauce, when he starts. Mine is sometimes lump. But 👍🏼, its nearly like i do it 😄, but without carrot and weeds (only basil and oregano) maybe i will try it next time.
One reason for the lumpiness could be due to pouring milk into the roux too early. You gotta cook out the flour in the butter enough until it looks more like a loose paste than a lumpy mess. If there are still clumps of flour in the roux, it'll stay even once you pour the milk. Using a whisk helps break apart the clumps of flour more easily.

I Made this with handmade fresh pasta and added some mozzarella cheese, it was just awesome!!
