And I want to recreate the authentic pita, as we used to call it. this looks amazing, and delicious... so clever of your mom to use the dish soap dispenser for olive oil!! easier to use rather than a pastry brush. I am definitely going to try this.. I know there are no exact measurements. But the phyllo sheets she made are so perfect! 😄
God tier level I been rolling out my own filo. I make a pie every week give or take I’m going to dabble with a thinner dowel and watch this about a few hundred times. Tiropita is the ultimate breakfast snack

I have watched endless videos of people make pita from scratch including my mother, aunties and mother in law, by far, your mothers technique is one of the best I have seen and I will attempt to make it your mums way. I make my own filo, but not like this. Thank you for sharing, it's so important to keep these traditions alive.

Excellent recipe and presentation. It has many names depending on which country or region but we call it Pita too! You mother uses lots of cheese and that is so awesome and she uses her stick like the pro that she is. Enjoy that awesome Pita! She makes it look easy but I takes time to get that good.

Yes! I'm alway too impatient to make the filo by hand like my yiayias. I love to see this done wholly from scratch. I put my time and love into buttering layers 😂 I do sheet pans but love this method. Tiropita is my #1 comfort food. Making it is therapeutic and end result is heaven on Earth.

Filo from the supermarket is great but home-made is probably better. There's an extra crunch factor! But there only so many hours in a day.
