Pistachios & almonds biscuits is a very easy and delicious gluten free dessert.
These biscuits will be after baking crunchy outside and chewy inside. You can make your own pistachios or almond flour using a food processor.
I've made 12 large biscuits but it depends on you how big you want to make them.
Serve your biscuits with a cup of coffee or your favourite tee or just like that.

Ingredients:

· 125g ground pistachios
· 125g ground almonds
· 100g sugar
· 1g salt
· 3 small egg whites
· 5ml vanilla extract
· Zest from a lemon
· Icing sugar for shaping the biscuits
· Whole pistachios or almonds for decoration

Instructions:
***************************************************
· Combine all dry ingredients: ground pistachio, ground almond and sugar.
· Add lemon zest and vanilla extract.
· Add egg whites slowly to control consistency. You should get a sticky paste which is not running from spatula.
· On a plate or on the surface table spread some icing sugar.
· Take a small amount of the dough, roll through the icing sugar, shape in a ball and slightly flatten them and place on the baking tray. It is up to you how big you want to make them.
· Stick a whole pistachio or almond in the middle of biscuits.
· Place the tray in the preheated oven at 180°C for 15-20 minutes. After baking they will have cracks, that`s normal.

These look delicious! I'm reading comments about the consistency. The amount of egg whites added seem to be the problem. Luckily, we have egg whites that are sold in a carton 😊 so it's easy to control the amount to add 😊 I'll give these a shot! They really look fantastic 😍

I made these and turned out so good we liked the taste of the lemon zest with the pistachio. thanks for sharing . As a low carb diet this suits me so well all I did is I used low glycemic sugar .

My cookie dough was a lot softer then yours so I had to add some almond flour. Ultimately it was absolutely delish!!! My best cookies yet!
don't add all the whites... keep going little by little till you get the right texture
my cookie dough was alot more watery and so I added a half cup AP flour and it turned out good

For the pistachio and almond, did you have to do additional steps besides grinding them like roasting or boiling? These look delicious
No. I had roasted Pistachio from the supermarket and ground Almond same from supermarket. No extra roasted or boiling. Thank you! ☺
