Looks like a winner to me! Would hazelnut flour combined with the all purpose flour work with this recipe? Certainly won’t have the same flavor notes but without a food processor I wonder how to get a close approximation of this cookie

Is there a reason not to use a piping bag for the melted chocolate? Measuring each portion with a quarter teaspoon seems unnecessarily tedious.
That's what I was thinking. For filling 32 cookies, the mess of filling the bag and washing up afterwards would be worth it.
And perhaps one can periodically zap the whole bag in the microwave on low power to keep the chocolate loose enough for piping.

Here's a stupid question: I have dry roasted hazelnuts. Do I still need to "toast" them as per the instructions or is this toasting instructions only for raw hazelnuts?
You can use them of course! Just give them a little heat, so put them in the oven for a couple minutes for refreshments, and give more taste while grinding 👌
I am celiac. These look really yummy. They would probably be really easy to make gluten free. Instead of chocolate, I think putting Nutella in the middle would be fitting.
I was thinking the same about Nutella, actually I thought that's what they would use. Either way, those little guys look delicious.

With that being said it is junk with all the crap they put into our food. Sadly only about 10% if even that on our shelves should not be eaten. But I do eat stuff occasionally that's not the best.
