How to Make Puff Pastry | Easy Homemade Puff Pastry Recipe

    In this episode of In The Kitchen With Matt, I will show you how to make puff pastry from scratch. This homemade puff pastry recipe is so easy to make and only requires 4 ingredients. I will point out this is a classic French style puff pastry and not the easier rough puff pastry. I find you get better layers with this method, although it takes longer, it is well worth it. Have leftovers? That is okay, you can easily freeze your puff pastry for later use. It is so simple to make, if I can do it, you can do it. Let's get baking!

    Ingredients:
    2 1/4 cups of all-purpose flour/plain flour, plus more for dusting. (270g)
    1/2 tsp. of salt (2g)
    2/3 to 3/4 cups of cold water (158 to 177ml)
    1 cup of butter (226g)
    Tools:
    Rolling pin
    Dough cutter/scraper (optional)
    Ruler (optional)
    Spoon
    Plastic wrap

    Matt, this is a lot more simple than other videos I've watched. Some videos show using a lot more folds. I like this shortcut method a lot better and it appears to be just as flaky. I'll be doing this one this weekend. Thanks for the excellent tutorial.

    Gotta try this one! I have gotten into pressure canning. My most adventurous item yet...french vanilla coffee creamer with whole milk which is shelf stable.

    Matt, is there anything you cant do? If you can do it, I can do it! I always thought puff pastry was difficult. You make it look easy, so going to try it.

    Nice video Matt. I have a few questions
    1. Water needs to be ice cold or tap water?
    2. Can we substitute refined wheat flour with whole wheat flour?

      Thank you. It can be room cold water works better. I wouldn't recommend only using whole wheat flour, better to use half and half if you want to use it. So half all-purpose/plain flour and half whole wheat flour. But you can always experiment for yourself and see how it turns out. :)

    Will the pastry dough recipe keep in the refrigerator for 3 or 4 days?

      Yes it will, or you can freeze it for much longer. :) Wrap the puff pastry dough tightly in plastic wrap. It will stay 2 to 4 days in the fridge or about 1 month or so in the freezer.

    How many stick of butter do you put in 4 cups of flour ? Thanks for anwserww

      Hi Janet. Don't use 4 cups of flour. Use 2 1/4 cup like the recipe uses, or double the recipe and use 4 1/2 cups. You would use 2 cups of butter which is 4 sticks or 448g, if you use 4 1/2 cups of flour.

      Hi Felix, no yeast isn't used in puff pastry. It is used in Croissants, which is very similar to puff pastry. :)
