Pooh was my first doll that my mother made for me out of a yellow Terry cloth towel with a red felt vest and black yarn eyes. I'm 61 now and it's one of the fondest memories of my life, I used to watch here in the kitchen baking while I sat at the table in my red iron high chair out of the way. Your voice triggered those memories. She is long gone now returned to The Lord, but the love lives on. I'll see her again some day. But I appreciate your videos and your voice. I'm loving it.

I have always failed at making puff pastry at home. I can't stress how many times I've attempted puff pastry only to end up with dense dough, my angry screaming, and a glass of self-sympathy whiskey at the end. This video finally set me straight. You have a wonderful way of both demonstrating and explaining baking methods. Thanks to you I was finally able to make Pastelitos de Guyaba from scratch, a favorite pastry in my family's culture. They were perfectly buttery and flaky, and gone in a day. Thank you again chef! I'll be back again for more recipes.

I unfortunately can no longer make puff pastry, because of my arthritis, but I used to be very good at it. I can just about roll out commercial pre made pastry, but I do sometimes use pre rolled. I used to love making my own pastry. I was always told cold hands help, so used to run my hands, under the cold tap and then dry them . I often avoid adding extra salt. 🥟❤️

Nice! I've never made puff pastry, only rough puff pastry, where I live readymade puff pastry is horrendous, using vegetable shortening. However if, actually when I do make this I'll use the freezer between layers, it'll save almost an hour and I can make a sizeable hatch. My mum made lovely millefeuille pastry for birthday teas back in the 1950s. She made cream slices and cream horns. Along with all the petit fours and the birthday cake and the trifle and sandwiches. No wonder she was tired. And there were 5 birthdays every year. Then Christmas and Easter. And of course then all cooking was from scratch, every day. (Proof that God isnt a woman. He did 6 days work and then needed a day off!) 😉

John, thanks for the video, which has spurred me to try puff-pastry.
(1) I bought puff pastry from the store, and plan to bake some store-bought and home-made side by side in the oven to see what differences, if any, appear.
(2) I do not have a kitchen counter wide enough. I use an opened plastic bag to make a sheet which lies on my kitchen table. The sheet is floured, pastry put on top, and floured. Flour drifts off the pastry onto the sheet. I flip the pastry then lift the side edges of the sheet quickly to flick flour from the sheet onto the pastry.
(3) My rolling pin is a length of plastic plumbing pipe, available at the hardware store. I cut a length of about thirty inches, which lets me make large pizzas, and gives me more control over pressure and angle when rolling out small items like my puff-pastry slab.
Question: MUST I leave the slab in the fridge for 20 minutes, or can I re-roll it once each day? Making a slab to use on-demand means that I am under no time-constraint to make a slab of puff-pastry. My plastic sheet can be washed with my dishes each morning.

I need to look up the definition of ´´simple.´´ Anything that takes four roll and folds and a ruler to measure the size of the butter has me heading straight for the puff pastry shelf in the supermarket and using the time gained to watch more of John’s normally excellent vids😉 End product looking totally delicious.

I grew up watching mum and grandmother make this every week, and I love the process and results.
I grate the very cold hard butter into the flour to begin, dipping it into flour frequently to keep it from sticking together, since I have no food processor.

Tipp, that I got from a pro: fold some parchment into a pouch the size and form you want and then roll the softish butter inside that pouch. This makes getting a perfect square pretty easy.
