Citra Hops vs. Mosiac Hops - SMaSH Beer Triangle Taste Test

- By request, we are comparing Mosaic and Citra hops in a side by side SMaSH beer triangle taste test.
John employed his normal SMaSH beer recipe to make these one gallon batches of Mosaic and Citra SMaSH beer. We exposed Mike to a triangle test format to see if he could pick the two beers apart.
Pretty interesting that these two hop varieties were as hard to distinguish side by side as they were. We expected the differences to be a little more obvious.

I love Citra! What I have found with it is that it is not great to add as a boil addition. It get pretty "catty" (I mean like cat urine! Yuck right!) I think that is what Mike is experiencing with some commercial beers using it. What I have had much with is doing a FWH with it and I don't experience that issue. So there is an experiment for you. Do a smash with Citra and just change the boil hops, at boil and FWH. Loving the new mics! 👍🍻
I was thinking about something similar to this the other night. Perhaps its time to start thinking about how these hops are applied in the process and what differences it makes. Great idea! Cheers! -Mike
I have huge bags of citra and mosaic that have been sitting open in the basement in a ziploc for almost a year. I was going to do a smash today with them but I'm starting to seriously consider just combining them, mostly because of this video. When i dry hopped with them in tandem and had a late addition of one of the C hops, maybe Columbus or Chinook, i forget, i got a crazy "juicy fruit" gum sort of aroma i wouldn't mind recreating.
Do a combo - it will be more interesting. - John

I am a fan of using citra hops, but over the years citra hops have changed. They aren't what they used to be but still solid hops.

I like both hops, I believe I often have a bit of both often with some Cascade. My poor kegs are empty at the moment.

I would love to see a smash beer using hops that are 3 - 5 years old and have been stored correctly compared to fresh hops and see how much of a difference it makes. Some have done testing with groups of 20 people and had very old hops and new hops... they didn't tell them one was old and one had new hops... only one person out of 20 picked the new hops as a preferred beverage. It is a fantastic time of year to purchase old stock of hops.

Just found your channel and am really enjoying your content. I recently made a citra/mosaic DIPA which i thought worked beautifully as the citra had the lighter lemony/mango flavours with the mosaic bringing the more grapefruity zestyness. I get what you saying about citra sometimes not delivering and i wonder if it just doesn't age as well as some other hops? Not sure about that just my twocents :)
Could be - I think we're learning as homebrewers that we don't get the best lots for our purposes. The best of the year's crop is bought up by the commercial brewers (rightfully so). Not sure what we are able to buy translates.
Hey guys, help me out… a lot of hoppy beers I try these days seem to have a hop variety that comes across like “Marigolds smell” (never actually tasted a marigold) to my palate. What hop varieties have that marigold like character?
Hey Randy - haven't run into any hops with a marigold descriptor. We'll think about it and get back to you on that one.
@@BrewDudes I think it is what most people refer to it as "DANK" to me it's just nasty.
You are using different glasses geometries and it too cold. By continuing to try to smell and taste, you are not cleansing your palate between. The volatiles are flashing off so you don’t get enough of them to smell - try to cover them.

The colour looks to me as the differentiator ... lol haven't finished yet to see the grand reveal but the cup with orange writing has a darker tinge than the other two which seem similar in colour.
Yeah I was right ... the odd one out is the one with the darker tinge in the cup. Maybe it's easier to spot from the video.

For those of us who want to get into small batch smash brewing as well, what OG do you shoot for in each? And I assume all 2-row so the hops can shine through?
My opinion would be 1.045 - 1.050
Yep as Short Circuited Brewers pointed out we keep it around 1.050. We have a video on John's 1 gallon smash recipe and process if you want more info. Almost all these SMASH experiments are from 1 gallon batch experiments. Quick and easy. -Mike

American 2-row. Pretty light and not much malt background but that was intentional. - John
you must taste Citra in a two week period. i agree that a commercial citra beer is hit or miss. BYO

This is the problem with smash beers and triangle tasting. Some hops, like Citra, are very strong and can overpower others in an IPA. Try a real great IPA recipe and compare with and without Citra. Bet you’ll see the difference. Ingredients and of course food can greatly impact perception of a beer. Better to use a complex beer, IMHO.

One of those looks oxidized. Significantly darker than the others
Funny, I kept looking at the color. I think that glass was making it look a little darker than it was on camera. -John
I noticed at first that one of the glasses looked darker, but shortly afterwards a different glass looked like the dark one. Probably just the lighting.
Cannot stand the slurping and gulping noises... especially from the guy on the right. I like the videos otherwise, but I can't watch any more. It's aggravating!
Tasting is tasting. Sometimes you gotta bring in a little air to get the full effect. Cheers! -Mike
