Guys, perfect timing as I recently won a kilo of these hops in my local homebrew comp. Put down a Smash brew today so have a good taste reference to go back to.
Love this! You guys are spot on with Eclipse hop pairings. I paired it with Centennial and Amarillo and fermented with Omega Cosmic Punch. The result was ripe grapefruit, passionfruit and guava. Cheers and brew on!
I recently did a hazy with Cosmic Punch. Pressure fermented and the final product had no flavor at all. Good aroma but just tasted like hop water. Didn't rally change much from my normal recipe other than base malt. I was wondering if you pressure fermented? I don't know if I should pressure ferment with that yeast or do my normal fermentation. Side note for some reason I got really bad efficiency that brew day too. So that could also account for everything else to follow.
@@fox189 sorry, I misspoke. I didn’t ferment with Cosmic Punch. I used Berkeley Labs Tropics. It’s equivalent to Helio Gazer in that both labs used the same or very similar methods to overexpress the gene for thiol production. I did not pressure ferment, but I did mash hop with cascade to further release thiol precursors.
Of camera John and I discussed what this hop (and Belma) would be like with a thiolyze liberating yeast strain. So its cool that you posted that here. Thanks. Cheers! -Mike
A brewery in Australia called Moffatt Brewery did a smash pale ale with eclipse. They called it, shadow of the moon. Pretty clever name, but its a great beer.
Seriously: im running voss KVEIK and i got alll the piney goodness. What it is: im stripping the insulation layers off my fermenter at 3 days , and dry hopping for 3, bottling at 6 days. WHEN >>i drop in the dry hops , shes still up around 30 Celsius! 3 days ( NOT longer) at around 30 gives you a golden zone of piney rezn and fruit notes
Eclipse is great. On the 2021 crop, I got major mandarin oranges out of it followed by some pine and resin. It's a great hop to punch flavours out of a newer age IPA. As with anything, probably better paired with Citra. Ha!
Hop Products Australia (HPA) owns Eclipse, Galaxy, Enigma, Ella, and also all the local hop growing estates. They grow hops in Tasmania and Victoria. All the expansion is in Victoria and I’m not sure whether they are growing Eclipse in both States but they certainly are growing it here in Tasmania. The local brew club usually manages to get a small sample of the crops and distribute to members as green hops in March or early April. This is followed by a ‘wet hop’ brewing competition a couple months later. I did not get any Eclipse this year (I was there for the Enigma - still haven’t made anything with it but must get into that!) but I heard the Eclipse had an excellent season.
I'd love to compare hops from the source to the hops we pick up in a shop here. I want to understand the differences we see in hop flavor descriptors. But sounds like a great situation you have being local there. Cheers! -Mike
Sounds nice! Glad you found a good one! It’s especially nice to have Australian/NZ options since they might have a good year down there when we have a bad year up here. Sounds like it might pair well with Mosaic’s berry flavors to get a broad spectrum of flavor?
Sounds like a good pairing if that's what you're after. But I like that mix of expected citrus notes and the "new age" fruit qualities of something like a Mosaic. Cheers! -Mike

Do you think that Citra/Eclipse would work? I'm thinking they might fill out each other's fruit/citrus profiles to provide a fuller citrus experience. Yeah most people are buying hops for flavour and not bitterness so this kind of analysis really helps
I agree. Of course, you have to have a good fruit forward batch of citra on hand. Sometimes even citra fails to deliver for me what it seemed to have 6-8 years back. Cheers! -Mike

Perfect timing! I also bought some of this recently and excited to use them with some simcoe and centennial for a nice citrusy west coast.
