    8-10 garlic cloves
    Few Wiri Wiri pepper
    1/2 medium onion
    1 Tbsp cilantro
    2 scallion
    Salt to taste
    1 1/2 Tbsp olive oil
    4 Medium tomatoes

    Lol! Gyal, you guys did an amazing job here at preparing this boloungey . The word bigan came from India but its actually pronounced differently from how Guyanaese says it.

    What about if you have a outside stove the one with the gas bottle. Do you have to wrap the baigan in foil paper also?

    If you're using outdoor stoves, you don't have to wrap it. I NEVER wrap my eggplants. I do add the garlic like you have done.

      I wrap it so it can lock in all the juice and moisture keep the eggplant nice and juicy
