that's the way my grandmother used to make tomato choka....just she roasted the tomatoes on an enamel plate.....hot sada roti with butter and a cup of milo tea,.......childhood memories in a one dish!

Shanty I always admire your cooking and your lovely spirit. I thought I should mention though that cooking food in aluminum foil is not recommended since the aluminum actually bleach out into the food which is deadly.

It's not deadly, some aluminum leeches out in high heats but it's not enough to cause harm in your body unless you actually have an already high aluminum content in your body or in the foods you're eating. Grilling or roasting in aluminum is usually fine, the stuff about it making people sick is a myth.

What if only have an electric stovetop
I heard cooking with aluminum foil can lead to aluminum poisoning.
Maybe you should have roasted the tomatoes on the hot coals.
We all go out to eat and lot’s of restaurants use foil …….baking potatoes 🥔 🥔🥔 and much more……we eat food heated in microwave so there you go.
D best tomato or bigan choka is to roast it in d coals and good bandania with green bird peppers

Tried this and the roasted garlic spoilt everything.
From the looks of it the garlic gets burned to a crisp. Try roasting till soft in a clay Baker for example. I also don’t burn my tomatoes but that’s me.

Tanty all we want is the taste of the burnt tomatoes. All this blackness in the pot from the tomatoes is not appealing. The choma will taste burn man 😁
