  • Here's a quick and easy Tomatoes Choka recipe. This is a very popular breakfast dish in Trinidad and it's usually eaten with a lot of pepper. Of course you can customize it to your preference. Here are the ingredients I used...
    Ingredients:
    15 small tomatoes
    1 head/ 10 cloves of minced garlic
    1 hot pepper, chopped
    1 onion julienned or cut into thin strips
    1 1/2 tbsp oil to chunkay
    salt

    Your pan is not stained it is seasoned, it when there is a thin layer of oil on the pan, season pans gives you a better cooking texter/flavor compared to a new one. People who bake bread in seasoned pans know how important it is. 😉

    when we chonkey tomato when heating the oil add one garlic and a tablespoon of geera seeds and let it burn then add it too the tomatoes it's the best flavors and taste you'll ever experience.

      That’s the only way. Never seen anyone make tomato Choka without chunkaying garlic and geera.

    my stove got foil always and its 14 years old and it looks like new still .. so stove looks great and works great no need to get rid of it.. luv your mom style..

    Tried your tomato choka and it was just amazing. Just added little bit of black pepper and green chilles for extra hotness. Had it with methi (fenugreek) roti. Awesome.

    Thank you so very much!!! I am American and I grew-up eating Trinidadian food at least 2-3 times a week because my friend/family were, you got it, from Trinidad. And Tomatoes Choka and Sada Roti were one of my FAVORITE dishes!!!! we lost touch BUT I always craved it, now I can be able to make it... and you made it look simple enough to make! Thanks1

      a quick trick is also, cutting up your tomatoes in a microwavable bowl, sticking it in the microwave for 5 mins, then mashing them up when it's done. In the meantime I'd be frying onions, garlic, bandhanya, and hot pepper in the oil, then i just throw it all in. I do add a few thin slices of raw onions in the end too :) Feeling for this now actually :)

    Luv Tis haven’t had it in a while tho, luv the roast version my husband like when it looks black , my mother in law show me the foil trick so dats how I does it, girl I have foil on my stove too it’s easy clean up lol, my grams makes d boil version dey both taste great but I jus luv d roast one an I does put it in a mini chopper after with skin an all, I doh chunkay mines cause it burns my chest dat way it still taste good tho I like to dip d roti in it I doh like soggy food , gosh I feel I goin to see if I have tomatoes in my kitchen 🏃‍♂️

    looks soo yummy!!!! Just to add, whe we do our choka we roast the garlic and pepper in a separate foil. Then we mash everything together and chunkay with the onions. It adds more smoke flavour.

      Thanks, yes that's also an option as well. I like to roast the garlic and pepper as well but sometimes when I roast the pepper, it burns my stomach. It's delicious either way :)

    i think all we trini put foil on our stove tops. love this i roast mine if it dont have some chared bits its not choka. the roti too some chared bit here and there yummy that way. my son and our puppy hates the chared roti though. love this as always bye until next time

    Hey there. I see this is a few years old and maybe you got to know this already. The pan, you say isn't dirty, that oil "stains the pan" it's called Patina or seasoning :D

    I usually add everything together..garlic onion pepper ..after I have "stewed " the tomatoes on high...and the oil I use is olive oil ..then I re heat everything together on high for a 2 mins

    LMAO. Aye, I know the struggles. The stove in my apartment is abt 30yrs too. I had to use two bottles of CLR to get it looking decent. Cyah put foil on it because it's electric.
