  • Time for that semi-annual jar check to sort out what I have, what I have to make and get rid of anything that may have failed.
    It was an all day job but totally worth it :o)

    Hiya from NW Ontario. I also grew up here and didn't know what the flourescent green stuff was. LOL! I have SOOOO much tomato products canned up still, I may need intervention because I'm starting tomato plants again this year! I must control myself and ONLY make pizza sauce, salsa, and sweet chili sauce. It'll be a nail biter! ...And jams and jellies - definitely have enough to feed a dozen children.
    What is an empty nester to do when we love canning?
    I understand your drama with woodstove dust and small spaces. I also have cases of jars in every closet. It's finally organised, but in three different rooms, which makes me a little nutty some times.
    Oh well, it is what it is. At least there's food!

    Okay so call me curious…I grew up in Ontario and I don’t know what the neon green stuff was in the jar was? Call me curious. 😂 ohhhh I continued watching and heard you say icicle pickles. Now I know what it is, yes we had them as well. 😂 I had totally forgotten about it. I wonder how your potatoes stay sooo white maybe it’s because PEI keep their best ones and ship the rest to us in Ontario. 😂mine usually look brownish after canning. I’ve gotta go back and see if you show how to can pineapple id love to know that! I just went through all my cans two weeks ago.🥰❤️🍁🙏🏻🇨🇦

    I've switched too a cotton baby diaper folded into four and let it drain. I pulled out all my black raspberries,black berries, red raspberries and strawberries. Enough juice for 2 batches of jam.

    I have to know! At 15:30, you mentioned having canned salsa water. Google had no idea what it is and I must know 😂

      HAHA, sorry to confuse, when I make salsa there is always extra liquid, I can it as well as it is safe to can and use to cook beans or rice in, tastes SO good

    I was told not to stack boxes of canned goods on top of each other???

      Only 2 high with the cardboard or foam board in between is recommended as safe.

      You can stack them 2 high and you are good to go, that is why I keep the boxes, works great. There are also some plastic boxes out there just for canning

    Its necessary to keep organized to know what you need to grow and to know what you'll be cooking based on your supplies.
    I only disagree on one thing. You really should have some protein in jars. Especially having an electric stove. If the power is out for a few days how are you going to cook a meal? If you have proteins on the shelf you can throw a quick meal together with a little wood or charcoal outside or in your grill. Instead of an hour or two over these fires. Also chicken or tuna can be make into full healthy meals or into salad sandwiches. Pork can be made into meals like sweet & sour over rice or pulled pork sandwiches with some of your homemade BBQ sauce.

      I have some turkey in jars from a couple of huge ones we got, I have been trying to decide what to put in jars, thanks for the referral to your friend, I will check them out.
