You should start a series where you teach methods of fixing food.. like if its too spicy or salty how to fix it without sacrificing your efforts
Love this idea!!!
That's an amazing idea.
For too much salt- vinegar.
For too much tartness- sugar or honey.
Too spicy- lime or lemon juice
Potatoes
@@nemmimomo That will just change completely the flavor profile, it doesnt work.
For sauces and stews that are too salty, you can just throw a peeled and cut in half potato or onion in there and simmer it for some time and the salt will migrate to the onion. For too much hotness or acidity there's not much that can be done. Just dont mess up in the first place and all will be good.
No one in the history of in n out has ever had warm, uncongealed animal style fries. They don't exist. They can literally make you a fresh order and by the time you sit down in the restaurant to eat them, they've already clumped into a solid mass. It's one of the unexplained mysteries of the world.
It's because they use a steamer to "melt" the cheese, which doesn't melt the cheese at all.
No you have to order spread on the side because the cold sauce hardens the cheese by the time you eat it
@@chrislojewski9097 Yup!
@@chrislojewski9097 wow you’ve literally changed my life!
@@haas4262 Follow up tip: this also means that if you have to take it the fries home you can broil them real quick without getting weird cooked sauce.
I’m never gonna lose weight with these “but better” videos…….
Just stop eating.
But more expensive lol
I'll just stay a fat baby at this point
You can sub out things for healthier options! That's what I do at least.
@@autodidact7127 1. Its not that simple. 2. They SHOULD eat but should be more careful about what they eat, and exercise from time to time. They should just talk to their doctor about losing weight. 3. Don't tell people to just NOT eat it could lead people to dangerous and unhealthy habits. (Sorry if this comment was just a joke and I responded rudely to it, I just don't like seeing comments like this. 😅)
As someone who loves the animal fries (I live on the east coast, so I only get to have them when I travel), I will say your version is certainly superior. The great thing about a mornay sauce is that it won't clump up or get gluey after a couple minutes. It will stay nice and saucey.

Can we all just admit that “made at home” is always going to be better? I’m just grateful that Joshua is there to help break things down for us
The in n out fries looked better than his though. And plus, he garnished it at the top which the in n out ingredients didn’t use, which is unfair. If he wants to do but better, he needs to use the same ingredients the fast food franchise used. Also, in n out uses grilled onions, he’s kinda delusional for mistaking them for caramelized onions
@@zb0001 I’d rather munch on in n out fries. They’re less expensive and better
@@zb0001 it's literally just chives and a pinch of parsley. Easily take those out to "even the playing field". Grilled or carmalized to oblivion the objective is the same for both. It's just that the flavor profile changes from carmalized vs in n outs greasy, disgusting grill profile. In the end, homemade wins.
@@familydude-lq7ec In n out is not greasy nor disgusting. Sounds like you’ve never had it. Homemade is better but when it comes down to this, in n outs looked better. I’m not sure if you know, grilled and caramelized onions offer way different flavor. And the dude trying the food is obviously biased as fuck, because it’s easy to tell which is homemade and from the fast food chain due to the fact by the time he gets home and cooks the fries, in n outs will be cold and the homemade ones won’t be since he just made them. I like Joshua and I like this series but this episode was a flaw and there was a clear winner here.
No, watch the Krispy Kreme episode.
A Weissman once said, "My caramelised onion is actually caramelised".
He should write a book and call it 'A Weissman Once Said'.
@@angrymango9580 yeah, the first page should be “ a Weissman once said.... PaPa kiss you” 😂
A Weissman once said, "BUTT BUTTER".
Fully carmelizing the onions invites construction issues for the burgers, Joshy - consider how efficient and fast in-n-out pushes food and how onion jam fits into that model
@@hellfish2309 In theory the carmalized onions can be done in advance. Hell they probably buy the onions carmalized.
If your still taking “But Better” video suggestions, I suggest doing Jollibee. Where I’m from we don’t have it my area but I’ve heard that it’s really good
*Damn, I’m just now seeing how many likes this got🥴. Hopefully now Josh will put Jollibee on his to do list, all the comments got me really, REALLY craving it now😭
YES. oh my god, as a Filipino - PLEASE DO A BUT BETTER JOLLIBEE.
Their chicken and dessert is so good a lot of people think the spaghetti too sweet though
I want to try Jollibee too
Agreed. I think that would be a pretty tough one to make better without going way outside of the spirit of that fried chicken. Sure, you could maybe add a bunch of sauces, or have a thicker, highly seasoned coating, but that would be cheating in my book. Jollibee is just crispy, juicy, chicken. Nothing more, nothing less.
We do t have it in Houston which is where he makes most of his videos
I work at in n out and you can Oder well done or lightly well done fries to prevent them from being soggy also you may request double steamed to make the cheese more melted. Also they are grilled onions meaning that they are strictly grilled. Hope that helps😁

If you want crispy fries from In-N-Out you have to order them “well done”!

If you ask for your fries “light well” they cook them a little longer so they come out crispier and taste a little more like potato chips (appropriately) lol now every time I forget to ask for “light well,” it’s like man, this isn’t even fries, it’s just potato.
Agree!! There are not many fast food restaurants where you can actually choose a preference of how you want your fries cooked especially when we have frozen fries at most places
May you win the lotto!
Ooo I gotta try those some time, I usually order fry light for animal style since melty fries are good. One thing is for certain never trust anybody that orders well done. Those are just stiff sticks of sadness
It's the opposite for the In N Out in my town. I've never ordered the fries "light well" because just the normal way already gets you just sticks of potato barely cooked and that's just gross. When I order them well done the are super crispy on the outside and fluffy on the inside.

Not surprised by the outcome. He's using techniques that high end chefs use, of course his are better. But try recreating that on a massive scale of hundreds of restaurants with drive-thrus. Animal fry's were an afterthought created with the ingredients on hand at In-N-Out. I'd like to see a video where he makes animal fry's better but only using ingredients they have on hand.
You have to order the fries “well done”. That way they are crispy!
I'm gonna be honest, I've always liked In N Out just straight up fries... Like, they just taste like fresh lightly salted potatoes, which I like lol
Yep 👍 we use salt and pepper :)
@@kaicerroni7256 Just salt and pepper is great! But In N Out fries are like eating cardboard bc you don't get some of the starch out of them by blanching them first.
@@rangertx4161 They use an odd potato variety that I think just sucks for frying. Not blanching will typically make fries soggy, not bland and cardboard like. The purpose of the blanch is to pull some of the moisture out after cooking the interior of the fry. The second fry will crisp them up and give them more texture and caramelization. If you want to double down on this, soaking in cold water, then frying, letting them cool off spread out, and then frying again until golden will make a fucking amazing fry, provided you use a good potato like a russet.
I have no idea what the process is at InNout, but they're usually crispy, dry, and totally tasteless. It's a unique combo of bad.
@@brendant19 You're right! I just looked up what blanching fries is for and I was wrong on that. I was under the impression that blanching was removing starchy-ness from potatoes and giving them better flavor. So I think you're on to something about it being the potatoes they use. Thanks for the info.
In canada ontario no in and out
WHEN HE ADDED THOSE CARMELIZED ONIONS TO THE SAUCE... I gasped
So, as a person who commonly does fries at a fast food place (Chic-Fil-A aka God's Chicken) I can actually back Josh up, it isnt his fault that the fries get soggy. They only stay crispy like how you want for the first 10 minutes, and even then, with our waffle fries, which have ample ventilation, the middles got soggy fast, they are heaped in a huge pile next to the fryer, with the steam constantly hitting them. The sog is not his fault!!
I accidentally double tapped my screen and it fast forwarded to when he reaches into the pot of water and grabs the fries but I thought it was a pot of oil and I spent like 15 seconds thinking “This dude is feckin’ insane with his big asbestos hands on him” 😂

Disbelief that Papa doesn’t know you can order fires “well done” or “crispy” at In n Out.
Also, missed opportunity to order fries “CWISPY.”
well done for them is just an over cooked fresh french fry. the double cook is the key
Exactly!
Shouldn't be up the customer to order the best fry. The best version should be the standard and if someone wants it cooked differently they request
@@Darkcruzer23 Have you actually had In N Out or are you just assuming that Josh's exaggerated opinion should be held as the gold standard for proper fry crispiness?
@@colorcodetrader4032 i havent had it. my point is idonnowhattoput says you can order them well done or crispy. but i shouldnt have to go to mcdonalds and say give me your best french fries. i should order fries and they be the best for 75+% of the population. if others want it soft or burnt they can request that. my comments have nothing to do with josh or my opinion on the food. just that restaurants should sell their best product as the standard. not some hidden or modified request
This is a great example of the law of diminishing returns. The home made version may be better, may be way better. But the difference in flavor probably does not out weigh the difference in time, energy, and cost of each dish. Now Joshua is great and he was able to make a UA-cam video that will get millions of views so it was worth his time, but to the average person it's definitely not worth it.
