@@nemmimomo That will just change completely the flavor profile, it doesnt work.
For sauces and stews that are too salty, you can just throw a peeled and cut in half potato or onion in there and simmer it for some time and the salt will migrate to the onion. For too much hotness or acidity there's not much that can be done. Just dont mess up in the first place and all will be good.

They should just talk to their doctor about losing weight. 3. Don't tell people to just NOT eat it could lead people to dangerous and unhealthy habits. As someone who loves the animal fries (I live on the east coast, so I only get to have them when I travel), I will say your version is certainly superior. The great thing about a mornay sauce is that it won't clump up or get gluey after a couple minutes. It will stay nice and saucey.

The in n out fries looked better than his though. And plus, he garnished it at the top which the in n out ingredients didn’t use, which is unfair. If he wants to do but better, he needs to use the same ingredients the fast food franchise used. Also, in n out uses grilled onions, he’s kinda delusional for mistaking them for caramelized onions

@@zb0001 it's literally just chives and a pinch of parsley. Easily take those out to "even the playing field". Grilled or carmalized to oblivion the objective is the same for both. It's just that the flavor profile changes from carmalized vs in n outs greasy, disgusting grill profile. In the end, homemade wins.

I’m not sure if you know, grilled and caramelized onions offer way different flavor. And the dude trying the food is obviously biased as fuck, because it’s easy to tell which is homemade and from the fast food chain due to the fact by the time he gets home and cooks the fries, in n outs will be cold and the homemade ones won’t be since he just made them. I like Joshua and I like this series but this episode was a flaw and there was a clear winner here.

Agreed. I think that would be a pretty tough one to make better without going way outside of the spirit of that fried chicken. Sure, you could maybe add a bunch of sauces, or have a thicker, highly seasoned coating, but that would be cheating in my book. Jollibee is just crispy, juicy, chicken. Nothing more, nothing less.

I work at in n out and you can Oder well done or lightly well done fries to prevent them from being soggy also you may request double steamed to make the cheese more melted. Also they are grilled onions meaning that they are strictly grilled. Hope that helps😁

No one in the history of in n out has ever had warm, uncongealed animal style fries. They don't exist. They can literally make you a fresh order and by the time you sit down in the restaurant to eat them, they've already clumped into a solid mass. It's one of the unexplained mysteries of the world.
It's because they use a steamer to "melt" the cheese, which doesn't melt the cheese at all.
No you have to order spread on the side because the cold sauce hardens the cheese by the time you eat it

FINALLY someone says it. All my friends say the place has the best *everything*, but I never believed that about the fries. At best, they taste like regular-ass potato chips, even when fresh.
They are dry as heck, which is great to scarf down I guess but Idk about being the best version of itself .. I prefer just making my own animal fries at home and the effort makes my food taste better

just 1 thing id like to point out.
for the preliminary taste/crunch tests, you always get it for take out. this means that they will be kept in a closed compartment and naturally even the crispiest fries would get soggy due to the heat anf moisture accumulating.
to be unbiased and fair, i request that for whatever future fry comparisons you do, you fry yo shit and keep it in a closed paper box for at least 5 minutes.
even then, im sure your stuff will kickass!

If you ask for your fries “light well” they cook them a little longer so they come out crispier and taste a little more like potato chips (appropriately) lol now every time I forget to ask for “light well,” it’s like man, this isn’t even fries, it’s just potato.

It's the opposite for the In N Out in my town. I've never ordered the fries "light well" because just the normal way already gets you just sticks of potato barely cooked and that's just gross. When I order them well done the are super crispy on the outside and fluffy on the inside.

@@kaicerroni7256 Just salt and pepper is great! But In N Out fries are like eating cardboard bc you don't get some of the starch out of them by blanching them first.
@@rangertx4161 They use an odd potato variety that I think just sucks for frying. Not blanching will typically make fries soggy, not bland and cardboard like. The purpose of the blanch is to pull some of the moisture out after cooking the interior of the fry. The second fry will crisp them up and give them more texture and caramelization. If you want to double down on this, soaking in cold water, then frying, letting them cool off spread out, and then frying again until golden will make a fucking amazing fry, provided you use a good potato like a russet.
I have no idea what the process is at InNout, but they're usually crispy, dry, and totally tasteless. It's a unique combo of bad.

I was under the impression that blanching was removing starchy-ness from potatoes and giving them better flavor. So I think you're on to something about it being the potatoes they use. This is a great example of the law of diminishing returns. The home made version may be better, may be way better. But the difference in flavor probably does not out weigh the difference in time, energy, and cost of each dish. Now Joshua is great and he was able to make a UA-cam video that will get millions of views so it was worth his time, but to the average person it's definitely not worth it.

Not surprised by the outcome. He's using techniques that high end chefs use, of course his are better. But try recreating that on a massive scale of hundreds of restaurants with drive-thrus. Animal fry's were an afterthought created with the ingredients on hand at In-N-Out. I'd like to see a video where he makes animal fry's better but only using ingredients they have on hand.
I love how the taste testers don’t judge flavor anymore. They keep saying “X one is yours” instead of “X one is better”. You can almost TASTE the impartiality /s
I mean is there any doubt someone who worked in an actual restaurant kitchen with a culinary background and all the time he wants to take on a dish can make a better version than a fast food restaurant staffed with teens working with pre-made ingredients? I’m only saying this cause I think it’s worth taking note of in any sauce endeavor. Most recipes just say like, “Mayo, ketchup, custard etc etc etc”. I really think a big part of the flavor that people care about will have something to do with the brand. Like Heinz and hunts ketchup are a lil different. All pickle brands have different flavors. Which do YOU prefer for your sauce mixtures? Which combos taste more “familiar” maybe a good idea for a video too

He would probably agree. People don't like In-N-Out because they are culinary gods of the fast food world. What makes them good is the quality ingredients at a reasonable price. Its part of the reason why In-N-Out has a hard time expanding cross country. And in all honesty its better that way.

@@philipbarton3456 I really wouldn’t say part of a reason. Literally people from all over the world come and get it. Always have people from Europe/Mexico anywhere else they have to get in-n-out when they first land. The expansion is hard because headquarters is in Irvine, they already have contracts with set people, they want the food to not be frozen (meat) and they don’t want to sacrifice the quality of the food. That’s why it’s taking forever to expand outside the west coast.

Good and fitting music for the simple but brilliant recipe. 10/10 will try making this myself.
We actually simmered the cut fries in a 4% vinegar solution in relation to the water at a place I used to work once.
That way the pektin in the potatoe sets & they get this thin coating on the outside that makes them even more crispy.
And I personally like to add a splash of wiskey or brandy into my burger sauce for the smokey flavour.
But thats the beauty of cooking. You can go 100 different directions as long as you respect the integrity of a recipe.
And you never stop learning in this profession.

I got a laugh when you mentioned tossing in salt while they are hot so the salt sticks. When I was in college and, let’s just say possibly under the influence, I said: “How do they make the salt stay on the fries?”. I’m still known for that 30+ years later. 😂
