    Chow Mein Sauce Ingredients:
    1 Tbsp (14 ml) Chinese cooking wine
    2 Tbsp (30 ml) Dark soy sauce
    1 tsp (3 g) ground white pepper
    1.5 Tbsp (25 g) oyster sauce
    1/2 tsp (3 g) toasted sesame oil
    2 tsp (5 g) cornstarch
    Chow Mein Ingredients:
    1 pot water
    8-10 ounces (226-283 g) noodles
    Vegetable oil
    2 green onions, sliced in 1-inch segments
    1-2 large ribs celery
    1 carrot, peeled and julienned
    3 cups green cabbage, finely shredded
    4 cloves garlic, finely chopped
    2 Tbsp (30 ml) water
    1 cup (120 g) bean sprouts
    2 cloves garlic, finely chopped
    Green onions, thinly sliced for toppings
    **Shrimp & Chicken optional**

    I was so happy when I realized I had everything needed to make it (beside bean sprouts). So I did make it right away, and it was AMAZING! I made it to go with some homemade dumplings I was preparing at the same time. Honestly one of the best meals I've had in a while! 😊

      Ha, I grew up eating Asian with the fish sauce, oil, and all that, yet I didn't have ANY of this in my home, just the cabbage and carrots. Why? Because I am not Irish but was about to make more corned beef and cabbage, lol. Top of the morning to ya!

    Anagha here from Mumbai. Tried your Chow mein recipe today. Turned out really really yummy. I was amazed by what a world of difference that two cloves of raw garlic at the end made. It took the Chow Mein to the next level. I love love love cooking. I cook almost every day. My husband recently introduced me to your channel. I love the way you have simplified the recipes. Yesterday I tried the Burrito. I made it veg and into a Burrito bowl. That also came out fantastic.       Honestly following someone else’s recommendations for kitchen tools and ingredients might just result in wasted money. You gotta dive into recipes you like, figure out what’s going to be in your permanent rotation and then buy the tools that make those recipes easier. For example, I have an enameled dutch oven because I do a lot of bruising and slow cooking, but you might not want to spend $200 on something you wouldn’t get much use out of. Kitchen tools are also expensive, so you should prioritize what would be of the most help and then slowly amass your collection.
      As for ingredients the best advice I can give you is pay attention to the ingredients you end up throwing away and figure out how to put them to use or extend their shelf life. I wash and freeze all citrus I plan to use for cooking, I do the same for hard to find ingredients like galangal, birds eye chili, curry leaves, etc. For cilantro and herbs-dry them well with a paper towel and transfer them to a ziplock with another dry paper towel, it’ll add weeks to their shelf life. Freeze chicken bones, onion peels, veggie scraps, etc to make homemade stock.
      Also-prep bowls. Everyone should have prep bowls.

Neither of these are consistent though both have used pre prepared and both have made every single step from scratch.

      If we're gonna go there, he didn't get a hammer and a beat sheet of steel into a real Chinese wok nor did he make the soya sauce.
      I thought the whole point of each exercise was to try and duplicate the dish using the same method and same basic ingredients only make it better.
      I think the whole take away here is for the benefit of the viewer. I look at this channel as an opportunity to learn how to make your own version of your favorite authentic brand named take-out meals at home. To put it in perspective, how many people do you personally know that makes their own pasta noodles? I don't know anyone... I don't know about you either but who cares? Half of the people viewing this channel don't even own a wok or a big gas stove... I'm reaching for the box of Vermicelli on the shelf and boil the hell out of it until it sticks to the wall. My Chow Mein my way in my electric wok

    My 10 year old son and I watch your videos all the time and we watched this one. It was so great and we are totally going to make these. You have really inspired him to be interested in cooking.     Having worked as a cook at panda, the chow mein recipes aren't very different. But panda being fast food American Asian food, chow meing is almost always made giant quantities with bags of noodles, almost no veggies to cut down on preparing vegies. All them noodles, no veggies and cranking it out for the horde lined up always results in crap chow mein. But, if you get it fresh and the cook takes their time with a smaller order, it can be pretty dam decent. As a prior panda cook, I just simply won't eat the non fresh shit laying out on the table, not worth the price man.
    Invest in a wok and you won't need panda for fried rice or chow mein, totally worth it

      I'm a current Panda Express cook and he wasn't far off from how to make the sauce. Chow mein is very hit or miss at Panda because new cooks get started on the sides station, so chow mein is made by inexperienced employees a lot. On top of that, it's the hardest thing on the menu to make even for an experienced cook. I agree with Jordan that I will not eat ANYTHING that has been sitting out on the table. That shit gets vile, especially when the front of house doesn't throw away 2 hour old food or they forget to turn the pan heater on. TBH I wouldn't recommend eating at Panda Express at all. So many health violations but their internal health auditors have a culture of "overlooking" things a lot, and government inspectors are probably WORSE. Freezer holding food is broken: I sleep. Dumpster lid outside is open: REAL SHIT.

    I can’t emphasize this enough because I’ve seen so many cooks make the dark version (double-ferm soy) of chow mein without dark vinegar (grain or grape). It lacks the brightness and pleasing texture. 6:54 the guy flat out told you why. Two of the primary functions of acidic ingredients/condiments are brightening the dish and peeling away the grease which allow the true flavors to shine. Adding to that is the balance of acidity and sweetness on top of savoriness, fragrance and sometimes spiciness. Unnoticeable amounts of acidity are the game changer and unsung hero of countless dishes.

    I made this today. Easy to make, important thing to do is mis en place. Hehe lots of garlic and use 220g of noodles. 283g of noodles is a lot for the sauce. Great recipe josh!

      If you have a tight budget and fettuccine at home it's absolutely no shame to use fettucine. Or if you live in places without easy access to Asian grocery stores.
      I think he meant the smartbutt people saying it's a fully valid replacement even if you have no excuse not to get chow mein noodles.

      You can use fettuccine as in "there's no law preventing that, and it's still going to taste good".
      It's just not going to be Chow Mein, it's going to be stir fried fettuccine.

      just dont use pasta, although they are both noodles, doesnt mean you can use both of them in the same recipe and it'll turn out the same. You can if you want, but just buy some actual noodles, Chinese noodles work great. You can use them practically in any Asian dish

      Except using canned beans 😂 Guess he likes beans that taste like metal. He lost a lot of cred from the Mexican food side seeing that. So much effort in everything he cooks but basically says the beans don’t matter so so so sad and lazy!!! He shouldn’t be able to say “papa no kiss” until he starts cooking real beans like papa intended.

    I have a family of 11 (9 kids mom and dad) and we had 5 dogs, a turtle, and a frog. My mom thought it was so funny to put all those stickers on our suv. It literally covered the entire bottom of the window. I would see people taking pictures of it all the time.

    Hey, i don't know how other metric countries do it, but over here in Germany we use tablespoons and teaspoons in cooking also. They are not standardized measurements, but we also only use spoons for stuff where it wouldn't be a too catastrophic if it was off by a little. If the exact measurement is important, the recipe will use gramms or ml, but if it isn't, teaspoons are just fine. So you don't have to measure out your spices by the gramm for our sake, Josh. It's fine. Thanks for your hard work.
