I really like making this dish for parties or to take to the temple. But I often think I either overcook or under cook the noodles. Thanks for sharing your recipe. My other favorite stir fried noodle dish is beef chow fun.

When I moved there wasn't much asian variety ingredients where I lived. So what I did was uses dark soy sauce and soy sauce instead. It may not be traditional but it tastes very close to the original. I'm saying this because I know there are alot of countries/places that does not have good Asian ingredients other than dark soy sauce, soy sauce, fish sauce, and oyster sauce.

If you soak the fresh noodles for 30 minutes, how long do you think I'll need to soak the dried counterpart to get to the same texture as a first time kua mee maker/eater?

Kua mee only has eggs for protein, but as with any recipe you can adjust to your preferences and add cooked proteins when you toss the noodles towards the end. Maybe your ate thinking of Thai pad thai noodle dish?
