He throw away behind the wok and use small amount on the wok at the center.
That actually is what I would avoid, which is why you see people put it in at late stage of frying anything with high heat. Burnt soy sauce is bitter.
What's the difference? How does it burn if put in the rice but not on the edge of the wok? I would think it would be the other way around.
