This chef is a subarashii consumate chef. I see it in his efficient precise moves. Thank, chef and vidoegrapher, for collaborating to bring this wonderful experience to my home.

I love how he thickens his sauces to order. Most places would make a big batch of sauce and thicken it with a corn starch slurry (that whats in the bowl that he adds to sauces. It is corn starch and water) before service. This dude makes your sauce in the pan and thickens it right before serving. Basically, there are no shortcuts. This man is a real chef. No wasted movement and he doesn't need to think, he just does. Much respect from chef to chef.
That's how Chinese restaurants thicken sauce on each dish... I have never heard or seen any places that do what you have said. It just won't work having that prep before hand with so many variant of flavors & dishes... The thickening action has to be done when the food is about to be ready.

This chef needs to get recognized. He’s quick and he can multitask around his kitchen. Awesome. I also like that his kitchen is clean and tidy. He has everything in reach and it’s very organized. One day when I go to Japan, I’d like to try his food. His food makes me drool.
What I love most is how efficient he is in this tight elongated kitchen. It’s such a pleasure to watch him move, almost like a dancer, gracefully going from one station to another, creating several different dishes simultaneously. He’s like a one man symphony-prepping, cooking, plating, serving, even washing dishes at one point. Truly a master at such young age. Bravo 👏👏

This man is just living my dream life. Owns his own restaurant. No other kitchen staff, just him back there (Oba-san clearing the booth, but not cooking). Patient customers. Full house. Delicious food. Just doing what he does best: Cooking. No fights, no fuss, no dealing with employee schedules. Wake up, clean, prep, cook and enjoy the smiles of every patient customer who knows its worth the wait. The freaking dream man.
Just watching the chef do his magic is a reward all on its own. He does the job of 4 or 5 people and doesn't even break a sweat. I am always mesmerized by how little of a space they work in and yet manage to crank out so many delicious meals.
I could watch this man at work all day. His attention to detail, along with all the movements, it’s like watching a ballet. The food looks amazing: I’m completely in awe. Bravo Sir, you are a difference maker in your community.
I worked at a Japanese restaurant similar to this one for 3 years. Started off as a dishwasher and worked myself up to chef. During peak hours keeping up with orders was a real challenge. The only way I could manage when left alone (usually there were 3 chefs) was with RedBull and house sake. Good times. Hats off to you good sir, a true master glowing with his craft.
It only took 3 yrs, and you learned everything from the front of house to back of house plus cooking skills in 3yrs. Or are you talking pantry chef. Because just to become Sous chef takes lots of years.
@@jhomwkic8748 They are on the other side of the planet, so stuff work in reverse, you cool down the rice to able to eat it. More seriously: the theory is if you put some (3) icecubes in the rice cooker, it helps to steam the rice and helps it not to overcook it, and have a perfect cosistency.
@@jackiegunter6001 I learned how to prep and cook everything from teriyaki sauce to tempura sauce, ramen broth to cooking tempura veggies and shrimp, had to get the temperature just right otherwise the shrimp wouldn't come out straight. I learned how to cut fish without getting the stomach acid onto the meat and finding and taking out every single bone (depending on the fish, they were all different). Something as simple as opening oysters and clams by their muscles before they'd tense up and close required speed and skill. Soft shell crabs to hamachi kama, egg omelettes on fried rice to black cod, broccoli rabes, gyoza udon and sobas. Fell in love with Japanese cuisine and the culture. I still have my recipe book and cook as often as I can. Broke many plates, burnt and undercooked many dishes and in one occasion, nearly burned the kitchen down. But Kenjisan my taicho was very patient and a great teacher.
Great praise to this chef for his work, the food looks delicious and is prepared with great pride. All of the dishes he prepares look beautiful too, can only imagine how good they taste.
This Chef is so graceful but quick with his movements…like he is a one man band and can do everything inside that kitchen with his eyes closed! Amazing Guy!

This man is just living my dream life. Owns his own restaurant. No other kitchen staff, just him back there (Oba-san clearing the booth, but not cooking). Patient customers. Full house. Delicious food. Just doing what he does best: Cooking. No fights, no fuss, no dealing with employee schedules. Wake up, clean, prep, cook and enjoy the smiles of every patient customer who knows its worth the wait. The freaking dream man.
I kept waiting for the other cooks to show up! This man is a legend.

Just watching the chef do his magic is a reward all on its own. He does the job of 4 or 5 people and doesn't even break a sweat. I am always mesmerized by how little of a space they work in and yet manage to crank out so many delicious meals.
years of experience and efficiency no wasted motion. kind of like muscle memory. at the same time its a lot of hard work. long hours.

I could watch this man at work all day. His attention to detail, along with all the movements, it’s like watching a ballet. The food looks amazing: I’m completely in awe. Bravo Sir, you are a difference maker in your community.
I worked at a Japanese restaurant similar to this one for 3 years. Started off as a dishwasher and worked myself up to chef. During peak hours keeping up with orders was a real challenge. The only way I could manage when left alone (usually there were 3 chefs) was with RedBull and house sake. Good times. Hats off to you good sir, a true master glowing with his craft.

It only took 3 yrs, and you learned everything from the front of house to back of house plus cooking skills in 3yrs. Or are you talking pantry chef. Because just to become Sous chef takes lots of years.

@@jhomwkic8748 They are on the other side of the planet, so stuff work in reverse, you cool down the rice to able to eat it.
More seriously: the theory is if you put some (3) icecubes in the rice cooker, it helps to steam the rice and helps it not to overcook it, and have a perfect cosistency.
@@jackiegunter6001 I learned how to prep and cook everything from teriyaki sauce to tempura sauce, ramen broth to cooking tempura veggies and shrimp, had to get the temperature just right otherwise the shrimp wouldn't come out straight. I learned how to cut fish without getting the stomach acid onto the meat and finding and taking out every single bone (depending on the fish, they were all different). Something as simple as opening oysters and clams by their muscles before they'd tense up and close required speed and skill. Soft shell crabs to hamachi kama, egg omelettes on fried rice to black cod, broccoli rabes, gyoza udon and sobas. Fell in love with Japanese cuisine and the culture. I still have my recipe book and cook as often as I can. Broke many plates, burnt and undercooked many dishes and in one occasion, nearly burned the kitchen down. But Kenjisan my taicho was very patient and a great teacher.
