I think it’s more to do with the ingredients they use…yes what we see is fried, but not all their meals are fried, and most are actually very healthy when compared to say what we eat in the West.

This is a busy kitchen with not a lot of room for maneuvering, so the cameraman had to be ever mindful of the movement of the cooks and staff; not an easy job! Great publicity for the eatery. Thanks for an inside look at what goes on in a busy "Chinese Style" eatery, both during the eating and the prep work before the place opens for business.

Running a full-time restaurant/shop can be a bit much but when you factor in the time that it takes to prepare all the ingredients and food that your cooking on a daily basis well that can definitely be a lot!! Yet the manager seems to handle it with grace and precision!! I love the way he prepares the meals his cooking skills are Amazing🔥!! There is enough food for 3 people on each of those fried rice plates. Who can eat all that and go to work, instead of passing out? But the chef is an artist and all kudos to him

卵の割り方や、焼豚の端を別にするところやネギ、キャベツの切り方も、町中華じゃもっと雑だったり端折ってる店もありそうなのに、下ごしらえをキチンとやっているところがかなり好感度たかくて、人気店になる理由が何となくわかる気がする

店舗まで100mと離れていない場所で仕事していた26年前から店長の変わらないスタイルに頭が下がります。
当時、自身の調理はもちろん、他の料理人の調理もすべてこの店長さんが味をチェックしてから料理が提供されていました。
ほぼ毎日通っていたので、しいたけそば、とくにらそば、たんめん、五目そばがヘビロテだった（レンゲにお酢をたっぷり入れて、その中で味変利かせて食ってた）。
ランチの混雑が終わったころ入店し笑顔で挨拶すると、これでもか！というほど野菜・具が増し増しの料理が運ばれた思い出。
大盛チャーハンがまだ1000円以内だったなあ。
この動画を偶然発見したことだし15年ぶりに行ってみようかと思う。長文ゴメン
