- This is so easy and delicious! Its a hearty way to start your morning. Its got oats, banana, shredded coconut and chocolate chips! You've heard of Chunky Monkey Ice Cream ...Now make some of this for your Family!
It freezes great too!
Ingredients:
2 1/4 C OLD Fashioned Oats
2/3 C chopped Walnuts or Pecans
1/2 C shredded coconut
1 1/2 C Milk or Almond Milk or light coconut milk
2 Extra Ripe Large bananas
1/2 C dark chocolate chips
1/4 C brown sugar
2 large eggs
1 tsp vanilla
1 tsp cinnamon
1/4 t salt
1/4 t baking soda
1 t baking powder
2 T melted butter

Feel free to make this without the coconut. This freezes great too!
I can’t believe how good this looked. If you freeze do you bake it first and reheat or freeze the mixture and then bake?
@@tammym110 yes bake it first. Then freeze. I like to make them in the silicone muffin cups. Then when cool pop them in a ziplock container. Reheat for 2 minutes in the microwave!
