- This Lemon Asparagus Pasta is packed with so much flavor! You get that burst of citrus from the lemon zest and juice and a nice creamy sauce from the coconut milk. The asparagus is sauted until its tender but still a little crisp and its just so yummy!
Ingredients:
1 lb trimmed asparagus
9 oz or 3 C DRIED spiral shaped pasta or pasta of your choice
1 large shallot
1 medium lemon
1 C full fat coconut milk
2 1/2 C Chicken stock or Vegetable Stock
Salt and Pepper to taste

Omg this was epically good!! You definitely need to make it!! It makes quite a bit, but you could cut the recipe in half. Or just do what I did and ate it for 3 days straight!! Sprinkle some Parmesan on top too!

And the next day I topped mine with some fresh shredded parmesan cheese and it was divine! The recipe does make quite a large quantity, so you could totally cut it in half. Have a great week!!

The next day I topped it with freshly shredded parmesan cheese and it was even tastier!! It does make a big batch so Im sure you could halve the recipe if you wanted. Or share some with a friend!
