    wonderful just tried it it turned out wonderful!!I had to make the coconut flour out of shredded coconut that I already had at home instead of coconut flour. It really is so good not too sweet.The fiber content is just awsome!!!omg awsome.

    There Are NO appropriate words to describe how wonderful this bread is. I made them as brownies with an extra egg yolk and 1.5 tsp honey. Used your toppings as well. And so easy! Thanks Tons.

      @franzitaduz Not certain about the points made but ,if anyone else wants to learn about 40 top paleo recipes try Ichordo Paleo Meals Fixer (Have a quick look on google cant remember the place now ) ? Ive heard some pretty good things about it and my brother in law got cool results with it.

    I am sure this recipe really tastes good but is more like a Brownie than a bread with only one half cup flour to four eggs. It has a creative, healthful twist to it though and goes together in record time. And Kelly your smile is worth watching the video alone, enjoyed.

      That is so sweet, thank you! Coconut flour is really interesting if you've never worked with it before...it absorbs sooooo much liquid. So 1/2 cup of coconut flour acts like 1 1/2 - 2 cups of regular flour! But yes, I do agree with you, this bread is kind of like a cross between bread and brownie :)

    Hi! I just discovered this recipe and gave it a try. My batter came out a LOT thinner than yours and the consistency of the bread is much different. Any thoughts? Did I over blend it? (I used a Vitamix)

    I used half cup of flour and it was much things than yours! So I added more but it's still way watery than your batter. It's in the oven I hope it sets up.

    How much almond or oat flour should I use to substitute for the coconut flour? I Thanks.

      I am not 100% sure since I haven't tried it myself, but a general recommendation is 3x the amount of almond or oat flour for the coconut flour. The batter should be a thick brownie batter like consistency. Hope that helps!

    How come you never grated your zucchini and drained the water out? It has a high water content yet your batter isn't watery! I'm going to grate and drain before adding

      As long as you scrape the seeds out, it won't be too watery! I make this bread a few times a month and never had a problem with watery batter or bread :) Enjoy!
