    whew ... nuts are expensive. But this bread has still, in a short amount of time, become one of my favorite recipes. A bread which is made entirely from nuts, grains, seeds, eggs and oil. Everybody likes it. It is particularly good for cheese, charcuterie, Pâtés, etc. But it is also good with "ordinary" spreads. Or as a snack if you cut it into thin slices and roast it in a pan with a little butter.

    After making this recipe six times, varying it each time, I've learned to use apple sauce to help with the moisture, and to never forget the salt. It's a great, easy to follow recipe and always comes out right.
    The first time I had the Kvali nut/seed bread a Dutch friend invited me to dinner. A bachelor, dinner consisted of a loaf of Kvali nut bread, slices of hard cheese, pickled herring, and bottle of Courvoisier cognac VSOP. That was it! Ha! Typical bachelor.

    There is a LOT of people asking why it is called a bread. Oh well, he who makes the recipe gets to name it. There is not much cheese in headcheese either :-s
    Other than that, a bread and a loaf is the same word in Danish. I have just translated the name directly from the danish "Nøddebrød" to keep consistency between my content.
    Feel free to call it a "Big Nutty Egg Omelet", "seed Loaf", "Dutch Chicken" or "Danish Nonsense". It's just a name.

      For me is a very interesting and necessary idea, I don't want to eat gluten or sugar and I need a bread, don't be disappointed, I'm sure it will help to people. Yesterday I saw a discussion about how the normal bread is not healthy, that could be a perfect alternative. Thank you very much !

      Not really, it makes a few loaves and your not wasting the nuts and grains anyway, you'll reuse them. If you can afford it and cut back on other things, you can just use one or two ingredients to make it this is just an example.

      You can play with ratio and make it affordable but it definitely is worth it if you live in climates with harsh conditions or need hearty quick things for kids that you can slap jam on.

    Tried it, totally love it! I ate mine with either cream cheese or guacamole. Super easy to make, even I could not go wrong. Sure nuts and seeds are expensive, but it's a fab alternative to normal unhealthy bread. I will be making this regular now. Thank you so much for sharing this amazing recipe! xx

      Thanks. That was the purpose when I wrote it. It is mainly there to cover up distraction noise changes when changing video clips. And to give a somewhat recognizable sound when watching the channel.

      We hardly digest seeds, it’s partly how nature grows more plants. Maybe they have some benefits if ground but otherwise I agree, leave them to the birds.

      @@PM-vb4od You do digest most of it. It's just fiber. Just cooking/roasting already brakes down the seed and acts as partial digestion. The protein and carb portions get digested and the fibers get softened up by the bile and HCL. If not, you wouldn't pass it at all. And part of the fiber acts as prebiotics for your gut bacteria. Just make sure to chew well before swallowing.

    We love this bread, we ate a lot of this similar bread in Sweden, so delicious! I always use water, add different herbs. I had some surefree chocolate chips (Walmart) a fourth cup of left over cranberries in my trail mix that I used for my bread this week, what a great taste. I use the mixed nuts container from our big box stores, Costco and sunflower and pumpkin seeds from our dollar store cost and online organic ground flaxseed costing 15 dollars total amount of nuts, makes 3 healthy loaves. Plus I had enough for 19 mini muffins with each loaf made. I put in refrigerator it last one and half weeks if we have one slice.per day.
    Easy to make and bake.

    Update ... just made this as a raisin bread ( sweet morning toast ) I added sultana , cranberry , blue berry , crystal orange lemon peal ( all dried fruit ) ...added big dollop of honey , Teaspoon cinnamon, ginger and nut meg . Worked really well , if your following this maybe use a recipe in your country as a fruit loaf or in Australia we call it raisin toast . Super yummy 😋 🇦🇺

    I like the idea of this, but the resulting texture wasn't really to my liking. I changed the recipe a up bit while still maintaining the theme of it. I used 2 cups Almond flour, 1 tbs baking powder and 1 tsp salt and the eggs with the whites whipped up to give more lift. Added the rest of the nuts that were pulsed in a food processor for a bit and then all of it mixed together. (fold in the egg whites gently) baked at 300 for about an hour or so (til the pick came out clean) WOW what a YUMMY nut bread! I serve this one with a meat and cheese plate and everyone loves it!! Thanks so much for the inspiration! :-)

      catamaran - me too, but I changed up the recipe a bit also. I used 6 cups of flour, I T of salt , 1 T of yeast, and 3 c water. This made an excellent dough after proofing and refrigerating. ... And it made F*ing Bread.
      * Not quite the correct recipe, I don't want to give away the milk; who'd buy the cow?

    I make similar ...I don't add eggs OR salt...I use coconut and water only ...I put in the pan and for 20 mins and then take the bread out of the pan and put on top of the oven rack and bake for another 30 to 40 mins...I also slice and put in the toaster ...it's so good !!!       Akariel not quite that simple. Yes, a surplus of calories will make you gain weight, no matter the macro. But an excess of sugar is still toxic and will make you gain weight even though sugar has few calories. A big reason for this is that your metabolism slows down with more sugar consumption. Your body essentially becomes less effective at converting food into energy the more sugar you consume, and you are more likely to store food as fat instead of burning it. Not to mention the mental drawbacks of sugar and the toll it takes on your energy levels. So no, getting fat is not just about eating too much. What you eat matters just as much as the amount.

      No, suger does not make you gain weight. The calories from that suger cause you to gain weight, including the immediate caloric load
      Upon consumption.
      Your right, when you say caloric source matters. However the real issue here is Complex Carbohydrate vs Simple Carbohydrate when discussing suger. As simple Carbs have a greater initial caloric load & a greater hormonal response.
      If you're eating a Reese's candy bar compared to eating an apple, even if they have the same initial set of calories the rate & manner in which those calories are absorbed by the body is different.
      So again.
      Caloric intake X Caloric burn= caloric retention.
      Absorbtion rates are factored in that.
      Saturated fats in particular block intercellular insulin receptors which is what causes long term insulin resistance.
      However both low fat and low carbohydrate have been proven to lessen diabetic symptoms once a
      claloric control has been established.
      But only Low refinment diets have been shown to fully reverse the disease in the long-term. It's the insulinogenic relationship between saturated fat and simple Carbohydrates in tandem with each other you are speaking about, not suger in & of itself. That is as inaccurate as saying all fat is bad.
      Look up the clincal work of Dr. Neal Barnard.
      I'm not saying go out and eat a bunch of refined suger. I eat a whole foods diet & personally that is what I advocate for.
      It's not suger on its own that will make you fat, its the eating of the hamburger, its bun, the salted deep fried fries & large soda all eaten to excess that does.
      Shit You can lose weight on an all oreo diet as long as you have basic caloric controls, but if you eat more calories in apples then what you utilize you will have weight gain. Even despite the difference in insulinogenic response. Unless you eat the same caloric load in Oreos as you do in Apples, that is when you will see a difference in the conversion rate of energy.
      Try eating an all high fat diet at a high Caloric intake, even without any suger you will still gain weight if you consume more than you use, even faster then high suger low fat diets since fat is more calorically dense & is more readily absorbed by the body for ATP conversion for when the body is low on its glycogen stores in the muscle tissue. Stored Lipids are the bodies "Oh Shit" button, which is why you have a greater rate of of ATP conversion during Cardio or Fasting.
      Run from the Lion, Survive the Winter.
      Ect, & why complex polysaccharids ( sugers ) have been shown to have a lower fat convertion rate than fat. The body has a more immediate need for complex carbohydrates as does our gut microbiome which converts resistant starches into short chain fatty acids- as precursive molecules for other bodily processes.
      This all revolves around the first law of thermodynamics & how the body prioritizes energy in the end. There is No escaping physics.
      I used a simple explanation before, because I find most people's eyes tend to glaze over at deeper mechanistic explanations of complex biochemistry.

    Looks delicious and a great way for one to cut back on the ultra-processed store-bought breads we have here in the US, and it seems perfect for people who have a gluten sensitivity.     Jax's Danish Bread (No eggs)
    My new roots bread: Final Recipe
    Invented in Danemark, and made in Sydney by Jax.
    Ingredients: kCal
    1 cup / 135g sunflower seeds or hulled hemp seeds 825
    *Soak for an hour in warm water prior to using.*
    ¼ cup / 45g flax seeds* So they become slimy 426
    ½ cup / 65g hazelnuts, almonds, pinenuts. Any nuts will do. Crush or chop. 380.
    1 ½ cups / 145g rolled oats 508
    4 Tbsp. chia seeds or other seeds like pumpkin or hulled hump seeds. 137
    4 Tbsp. psyllium seed husks (3 Tbsp. if using psyllium husk powder)
    1 tsp. fine grain sea salt (add ½ tsp. if using coarse salt)
    1 Tbsp. maple syrup (or honey or rice syrup) 61
    3 Tbsp. melted coconut oil or ghee or butter or any solid fat. 155
    1½ cups / 350ml water
    Directions:
    1. In a large bowl, combine all dry ingredients, stirring well. Whisk maple syrup, oil and water together in a measuring cup. Add this to the dry ingredients and mix very well until everything is completely soaked and dough becomes very thick (Do not be tempted to add water or liquid to make it easier to stir). Place well mixed mixture in a DEEP flexible silicon bread pan. Smooth out the top with the back of a spoon. Let sit out on the counter for at least 2 hours, or all day or overnight. To ensure the dough is ready, it should retain its shape even when you pull the sides of the loaf pan away from it. This loaf does not rise, but does adhere well together thanks to the psyllium husks.
    2. Preheat oven to 350°F / 175°C.
    3. Place loaf pan in the oven on the middle rack, turn heat down to 160°C and
    bake for 60 minutes. Remove bread from loaf pan, place it upside down directly
    on the rack and bake for another 60+ minutes. Bread is done when it sounds
    hollow when tapped. Let cool completely before slicing (difficult, but important).
    It should not ‘sag’, if it does, use less water and bake for longer at a lower
    temperature
    4. Store bread in a tightly sealed container for up to 10 days. Freezes well too - slice before freezing for quick and easy toast! Birds will relieve you of any crumbs and leftovers.

    This bread was amazing! So far it has lasted seven days and is still fresh, moist and delicious. I added some almond flour as I had some lying around the cupboard and wanted to use it up and also some sultanas which added a really nice sweetness and a different texture.     Made this and it is fantastic, I added about 3tblspns of Fiber Yum and handful of golden berries (about 8/10) and a little vanilla, some pumpkin spice, it came out like a Christmas nut loaf, fantastic. What I'd really like to see is the macros for the recipe, calories, fut, carbs, protein etc.

    Thank you so much for this recipe! I made it and it turns out excellent! It's delicious and well structured - best Paleo Bread I have ever made.
    The 500 per 5 eggs rule are so simple to follow. I can already see this become a staple food in my house and being enjoyed in various ways.
    and.. thank god this doesn't call for psyllium husk powder which a lot of Paleo/Keto bread asks (I don't like the taste of it). This bread is simple hearty! Lots of thanks from Vancouver, Canada :)
