    I use "Pomona's Universal Pectin" to make jams and for me it's perfect because the two parts when added in the correct sequence does the thickening. You can add as much sweetener as you want, regular sugar or substitute. Just follow directions.

    That is so easy. I always thought that jam needs a thickening agent. So, I'm happy to see that stirring is the longest part. Thanks for the video.

    Jelly is made from fruit juice. Jam is made from whole fruit. And Preserves has chunks of fruit in it.
    This looks great! Just got my Allulose, making sw cond milk and raspberry jam!

    Looks awesome! My Mom made jams and jellies every year. The difference for jelly: she would cook the (mainly) berries with sugar and hang the resulting mixture in a jelly bag to obtain a clear juice, and then she would cook the juice with pectin to make jelly! My favourite jellies were blackcurrant, crabapple, and quince. Jam can be made with other fruits as well, such as apricots peaches and pitted cherries. Of course, following a keto lifestyle we are limited in the fruits we can choose.

    I started cooking down berries that I eyeball as getting ready to turn bad. I use allulose too. I start with a bit and taste it as I go and add more if needed. Yep! You're right about the crystallization. That's why I switched to allulose. I can't stand the crystals. I would have to recook it to make it go away. My son eats my jam and he doesn't know it's keto. It's that good.
    Wish we had your bakery here...😪

    I buy allulose in 20 lb boxes, too, but for me it lasts 6 months

    Looks yummy! I'm hoping you solve the bread dilemma.
    Creating that recipe and making perfect loaves for so long, moving and experiencing issues has to be the most frustrating thing ever. Maybe in solving issues you are experiencing though, will solve issues for many.
    I think I will use allulose to make jelly, jam and preserves with. This looks very good.

      I have jam from last fall in my fridge still. As long as there is no cross contamination in it, it should last a long time in the fridge.

      That's why a lot do the chia seed jams, I just hate the texture. I wonder how hemp seeds would do, they are high fat and protein. Powders may add a weird flavor. A unflavored or a strawberry collagen powder may be good cause they mix well with water.

    Funny. I find Allulose just as sweet as sugar. And no weird after tastes etc.

      Do you have a favorite brand of allulose? So far granulated RxSugar that is gmo free is the best - but hoping to find one that is certified organic!

    I can’t do Allulose and I can’t do erythritol… super bad tummy issues with both! Can I use glycine or pure Monk Fruit powder?

      Pretty sure I wrote in my blog that you would just have to use a very little amount but it should be fine.

      @@JenFine223 you can use that. I would do it to taste still though. Strawberries are usually sweeter than raspberries.
