Regarding the unmixed parts in the divot at the bottom. There is a black plastic screw on the left above the speed lever. Drop a dime into the empty bowl, add the same blade you're using here. Turn it on low. Turn the screw until the dime gets moved every other time. Your unmixing problem will go away. I learned this from Helen Rennie and my Kitchen Aid mixes better than ever.
I made these cookies today using Victoria‘s Keto Flour from Victoria’s Keto Kitchen. They turned out really good! I weighed her flour to 82 g instead of measuring one cup. After 10 minutes cooking time the cookies had not flattened so I took them out, used the bottom of the measuring cup to flatten them slightly, then put back in the oven for three minutes. Oh, and I also used fresh blueberries instead of frozen because I had some that needed to be eaten. I warmed them in the microwave just like the frozen so they would soften and could be mashed. This was perfect! Great job Wes!
Never seen these cookies before! I do like blueberries though. I got a mixer blade with a rubber scraper that cleans the sides of the bowl as it mixes, saves all that scraping down, you should look into it

Actually, Victoria redid her recipe again, this time using oat fiber, although bamboo fiber is easy to find again. It was only difficult right after she came out with that recipe.

I bake these 10 minutes, flattened them and baked them 2 more minutes. They are very sweet probably due to white chips. Would cut sweetener or chips next time. I used bamboo flor and I really like texture.

I did make these with Victoria's perfected keto flour v.2, they came out well but did not spread at all. Compared to the almond flour version you demonstrated there is a definate difference in texture; almond flour- very soft texture with crisp edges, spreads quite a bit while baking. Victoria's perfected flour- does not spread, cakier texture when not pressed flat and crisp edges. I will make again and press flat to see uf there is a change in the cakey texture.

I did 2 batches, one almond flour one with Victoria Keto flour(because I have it thanks to you, I love it). I did not have blueberries, but I use sour cherry instead. Almond version just does not stick to it self and crumbles down, and second version does not spread, and they stayed really soft inside, not like cookies, more like fudge. They both test magnificent and that rich pinkish color is amazing, but it is not cookies.
@@eruiluvatar236 flax, egg white (fresh or powder - just reconstitute) and for cold dishes guar gum and/or locust bean gum. Also unflavored gelatin can work... Lots of keto cooking folks on the regular web have done the experiments for us, so check 'em out... good luck!
Looks yummy, but with this being keto why would you not add an egg or two as that extra protein will help offset the carb affect -- does the recipe work better without eggs?

Are you referring to store bought berries? I have been freezing blue berries for years and years and I always "wash" them before I freeze them. I freeze them on trays first, the berries freeze individually so you can have small enough amounts so I don't have to thaw large quantities. I'm going to read the outside of frozen berries in the super market
You can leave them out, if you like. But those carbs come from the natural sweetener erythritol and are subtracted from the carb count. That’s how we get “net carbs” from “total carbs.” Erythritol carbs come from sugar alcohols that pass through the body in urine and are not digested. That’s why it’s the keto sweetener of choice for so many people. They are accounted for in the final “net carb count” posted in the video.

SHAKE y'all! (but only if your using Victoria's keto flour) They turned out great but they don't spread with VKF so I pressed them down with a fork halfway through to flatten them up a bit.

In my country almond flour is close to 14 euros per kilo (around 15$~16$) but the thing is a daily salary here is around 25~30 euros per day, so that is quite expensive to make cookies or bread.
I just have such issues with these recipes that are mainly almond flour.. no matter how fine it is it's still gritty.. but these cookies at least look good.. hahah

"Macerating" involves putting the sweetener on the berries and letting them sit to draw out the juices into the sweetener. You only thawed and mashed yours.
Google has this to say about maceration: to cause to become soft or separated into constituent elements *by or as if by steeping in fluid. *By mashing the blueberries, it released the liquid, which they then steeped in, so I don’t think his usage here was wrong, in this case.

Funny I was just about to recommend Victoria's flours for people who don't like almond flour.
Victoria has several different versions of her flour, she is always trying to perfect it.

+1 . My gut can't handle xantan gum. I was going to ask if substituting for egg, egg powder or flax powder could potentially work.
I think you can use Glucomannan.
glucomannan (konjac root) is a good substitute for xanthan gum

Maybe, just adjust the proportions accordingly.
You can't substitute almond for coconut one for one. So you'll probably hand to experiment and adjust. 😊
Maybe coconut plus some bamboo - you will need the bulk - but both are 'drier' so you may need to add the egg, and let the dough rest.

Berries are not washed before freezing. Wash them under warm or even hot water in a colander, they’ll thaw in about 30 seconds.
Are you referring to store bought berries?
I have been freezing blue berries for years and years and I always "wash" them before I freeze them. I freeze them on trays first, the berries freeze individually so you can have small enough amounts so I don't have to
thaw large quantities.

There's a lot of carbs in those white chocolate chips. Are they necessary?
You can leave them out, if you like. But those carbs come from the natural sweetener erythritol and are subtracted from the carb count. That’s how we get “net carbs” from “total carbs.” Erythritol carbs come from sugar alcohols that pass through the body in urine and are not digested. That’s why it’s the keto sweetener of choice for so many people. They are accounted for in the final “net carb count” posted in the video.

I was able to get diamond almond flour for$4.99 this week. I think it’s on sale at Kroger for $6.99 a bag and the had $2 off coupons on them.
@@hermonorossco7988 I live in Europe and I was referring to the price per kilo. How many grams (or bullets per freedom or something) is 4.99$ get you?
In my country almond flour is close to 14 euros per kilo (around 15$~16$) but the thing is a daily salary here is around 25~30 euros per day, so that is quite expensive to make cookies or bread.
I just have such issues with these recipes that are mainly almond flour.. no matter how fine it is it's still gritty.. but these cookies at least look good.. hahah
if you use the recommended victoria's keto kitchen flour, it does help with some of that grittiness.

"Macerating" involves putting the sweetener on the berries and letting them sit to draw out the juices into the sweetener. You only thawed and mashed yours.
FYI: Maceration does not require sugar.
Google has this to say about maceration: to cause to become soft or separated into constituent elements *by or as if by steeping in fluid.
*By mashing the blueberries, it released the liquid, which they then steeped in, so I don’t think his usage here was wrong, in this case.

i have finally figured this out..i just do not like how gritty textured almond flour is. Not a fan of things like bamboo fiber..how is that " food" ? People dont eat bamboo. SO I guess im just in a negative frame of mind tonight. PLus,if Thrive accepted EBT, they would have thousands and thousands and thousands more new customers. None of these subscription services does, and it is depressing. LOVE blueberries though. May try this. Thanks WES,,
