- I figured out delicious keto thumbprint cookies and wanted another cookie to add to the video and I really wanted to do a traditional Italian Christmas cookie. I really wanted to make Italian cucidati cookies but they have a bunch of ingredients not good for keto but maybe when I get pregnant and do more low carb I will attempt a recipe for next Christmas!! I saw pictures of chocolate dipped Italian butter cookies and thought they looked amazing so I got to work. Crispy on the outside, soft and buttery in the middle so yummy!!!

I have followed several of the keto bloggers and you are my favorite by far because you explain why you do things the way you do and you explain why each ingredient is included and what its action is in the recipe. I have learned so much so quickly because I had been using several of the ingredients like xanthan gum without really knowing why it was included. Also, almost all of the other bloggers are stuck on almond flour which has not given good results in much of my baking. You are a breath of fresh air in this field!

I just made the Italian butter cookie recipe, but I used it as a thick crust and topping for blueberries tossed in swerve… my Mom used to make a blueberry pizza with a pie crust bottom and crumble topping, and I’ve been wanting to re create that for some time. But figuring out a really good keto crust is hard when I’m trying not to eat gobs of nuts.
I doubled the recipe, used a 9” silicone round pan, I cannot believe how great this turned out. A lot of keto deserts leave me feeling unsatisfied. I don’t know why but even when they taste good, it doesn’t hit the spot. This did though.
The bottom was thick like a brownie, but tasted like a cookie, it was crispy and chewy… I cooked it for a while maybe 40-45 mins till the top got golden, the bottom didn’t burn at all. This was seriously incredible. Finally a crust that tastes like a cookie and not coconut and also it has no weird tastes that some keto ingredients impart.
It is like a thick cookie cobbler. It’s fantastic. Thank you! ( the batter was easy to put in the bottom of the pan but very difficult to spread on top, I just kept my hands oiled and I was determined to make it work)

I made the raspberry thumbprint cookies this year on Christmas Eve. They are my favorite keto cookies ever!!!!!!!!!!
I tried the thumbprints today (used store bought jam), and am very pleased. Recently I have begun to have issues with almonds, so I wanted to experiment with non-almond recipes. I tried coconut flour some time ago, but found it so dry I couldn't swallow it. That is NOT the case with your recipe. It is so good, WITHOUT that dryness. Thank you for sharing.

Thank you for these recipes, brought back happy memories with Mom, we did use Nutmeg in one of our cookies, they were like your Italian ones and were called Nutmeg logs. I also HAVE to make Russian Tea Cakes or Mexican Wedding Cakes. I'll have to check f you made them already.

Made these yesterday, I had never used a tip, wanted to do Milana cookies, I used the large tip, but uses zip lock bag, mistake number 1 , tip broke thru bag, then I pushed through with finger, then tried to get off the paper, I was covered with dough, it was tasty, I thought if my hubby saw me now I was literally covered in dough, I was laughing so hard. My next mistake trying to cook on silicone sheet (I went off printed copy, I should have watched video again, but after finally getting tip from Amazon I went gun ho) the dough was delicious, I probably y ended up with 14 Italian cookies. Maybe I will try again when I get pastry bag. Thank you for you hard work
Oh boy you had a fun time! Glad you got something out if it all! Definitely helpful to use a pastry bag or can use a freezer bag, can even reinforce the cut you make for the tip with some tape to make it stronger. You're very welcome!
@@KetoUpgrade I did use a freezer ziploc bag but I squeezed so hard that the dough went through, but boy was the dough good, had it all over my hands, wasn't going to waste it too good for that, will do again

I use citric acid powder instead of lemon juice otherwise you just have to boil it longer to get rid of the extra water.

King Arthur makes a sugar replacement that is the closest to real sugar I’ve found. I highly recommend it for keto baking.
I definitely agree combining all our sweeteners together is the best which is what king Arthur did. They all lend different things to our baked goods so it makes sense.

I need to get those raspberries out of my freezer and make jam. Unfortunately I have family members who object to the seeds so I have to labor for a long time over a sieve! I even searched for a faster method online but I couldn't find one.

My oven is ancient- like me-lol so no electronics. Steve at serious keto did a segment on recalibrating your oven so that's probably a good thing for newer ovens.

It might make the cookie too soft but you can try it.
Alycia; I am crazy about your Thumb Print cookie dough. I have been experimenting and have had successes and failures. But isn't that life. I did make one that I love and I call it a Pink Lemonade Cookie. They are beautiful. I wish that you could see them. It is all you; I just goofed around. And I haven't seen every video that you have ever made...but if you need an idea, the only differences that I did is doubled the recipe and changed the vanilla to 1/2 teaspoon and add 2 teaspoons of lemon extract; oh yeah, I added 3 more tablespoons of coconut flour. Everything else is the same. Except I did add buttercream frosting that I added lemon extract to taste (go light on the frosting) and red food coloring to make it pink. Decorate with pumpkin seeds as a 5 pointed flower. Can you see it? A yellowish cookie with pink frosting and a little green flower on top.
With that much extract you need to let the cookies set out for several hours so that the alcohol will totally evaporate. Thank you for your amazing recipes. I'm having so much fun playing in the kitchen.

Hello I just came across you on UA-cam, I will definitely be trying these recipes when I get a chance but I am curious have you ever used allulos sweetener if so what did you think of it.
I have tried various keto recipes with either stevia or monk fruit or swerve none of the recipes I've tried really taste good I don't know if it's the sweeteners or it's just me, I've tried Brownies,cakes, cookies nothing really that good. Except for a carrot cake I made using Splenda it was delicious, but from what I've read that's not keto.
I use allulose in several recipes I like it for many desserts but not much for baked goods. If you have tried other recipes, it's probably the recipe, not the sweetener that you didn't like, I find almond flour ruins keto desserts for me. There are also tricks I've figured out for keto baked goods that make them taste like regular baked goods. I encourage you to watch some of my videos to learn about keto ingredients and techniques and try a few of my recipes as written. Hope you enjoy!
Merry Christmas Alycia. Your Thumb Print cookies are amazing! I just made my third double batch and I wanted a little bit of Christmas coloring. I didn't have any green sugar substitute. What else is green I thought. Pistachios but they have ugly brown hull fragments. Pumpkin seeds, chopped fine or course! They are perfect and not a "nut." Thinking of your family. Can't wait to try them, just pulled them out of the oven.

I love the expertise you bring to keto recipes. I noticed you use imitation vanilla extract. With all the quality ingredients (as well as expensive) used for low carb treats, I'm curious about the imitation extract.
I just use it because there is no sugar added to it and it is cheap. I go through sometime one of those big bottles a week with all the testing, I can bring myself to spend 30 dollars for the same amount of good stuff. That is the best tasting cheap one I found, the great value imitation was awful, just tasted like alcohol.

yeah so I followed another raspberry recipe that called for gelatin, it was AWFUL!!! This one I have done for a few years and it is so much better. I thought adding the gelatin it would give it more of that jelled kinda texture, but it was like jello, hated it lol. Maybe the instructions just added too much... I'm not sure but I'd rather have the fresh taste than that crap! Thanks again :)
Made the chocolate chip cookies (added orange zest) yesterday -- SOO GOOD. Contemplating keto-fying lemon ricotta pancakes with blueberry sauce, but I'm betting you could do it better . . .

Everyone uses the frozen liquid egg whites for the psmf bread. Not sure if any adjustments are needed. I'm just new to the psmf bread thing.

Yeah I didn't list my hand mixer because I hate mine, lol. I suggest finding an old school one for cheap. They were so much better back in the day!
@keto upgrade these look awesome but I've been wanting to ask if your experience a cooling effect in your mouth with these? I'm guessing with the allulose probably not.
I don't notice the cooling effect in baked goods much. The only time I notice it is in recipes that have a lot of powdered erythritol in it like a buttercream frosting or something.
Can I substitute the Whey for egg white protein?
I noticed some sweeteners being used for certain things. Like which sweetener would be best for which function? Like making jam or filling, crispy cookies etc...
Any uses for granular or liquid stevia?
Granular stevia you find at the store isn't usually straight stevia, it's usually blended with erythritol or some other additives usually to make it the same sweetness as sugar so you can use it in any of my recipes. Liquid stevia I have used in recipes to cut down on the amount of monkfruit/erythritol blend I use. And I like liquid stevia to add a little extra sweetness to whipped creams and other sauces, frosting and fillings.

Did you weigh the ingredients? The thing with these cookie recipes, a little less "flour" makes a difference because there is so little "flour" in the recipe to begin with. You don't suck at baking, baking is just a pain in the butt! Lol
Love your channel! Was wondering if I cooked the berries down until “jammy” take it off heat and stirred in either powdered or granulated monk fruit would that prevent crystallization?
It probably would prevent crystallization, the jam didn't look bad after it was cooled but then when I baked them they got a crystalized film over the top of the cookie.

You would think it would be easy to make it chocolate but it isn't. Cocoa powder is so drying its hard figure out the ratios. You also need more sugar. Just looked up a recipe and it called for a half cup of cocoa powder but I believe you would have to cut back the "flour" and up the sugar in the recipe as well. Wish I could be of more help but I have yet to experiment with that.
