    Loving the look of the cake am going to try this one Friday. I keep watching some video of other people making the cake but nahh don't like the look of some like dry bun lol ..I love this one

      I'm sure you'll love this! You can add more browning if you want to. Most ppl prefer their cake darker than I do

    Yesterday I made my Christmas cake.I followed your recipe for the pudding like textured Christmas cake with a few alterations, it tastes really good for my first attempt at making Christmas cakes.

    Jerene! The flavor of this cake was
    P-E-R-F-E-CT. It was incredibly moist as you said but maybe just a little too moist as the cake crumbled easily when cut. Any idea how I could take away just a little of the moisture? I also love that the recipe makes two 9” cakes. Thanks so much for this recipe. My mom said it taste like my grandaunt’s cakes. Now that’s a compliment bc she was a REAL baker. Much love and appreciation for your time and recipes 😊

      2. Use less of the pureed fruit
      3. Spritz cake lightly with wine ONCE when hot, instead of daily
      4. Bake the cake over the water bath for a little longer

    Thanks so much for your video, Jerene: lovely, calm & informative presentation of what seems an excellent recipe. I made my first Jamaican Black Cake a few weeks ago, using another recipe; can't wait to try it for Xmas!       It's like a very dark caramel. It is usually sold in a bottle and can be found in Walmart and Caribbean stores. We use it to add colour to dishes.

    I used your recipe and made black cake for the first time. The cakes were super moisted but they cracked. I use the water in the pan. Don't know what happened. Going to try again.

      Hi Brigitte, There are so many things that could cause cracking like oven opened too soon during baking, wrong sized tin, improper measurements etc etc. I've been getting good feedback so far so once you try again hopefully it doesn't crack.

      Do you use mixed spice in cakes? There are several brands of mixed spice that include coriander in the blend. It isn't new to use coriander powder in desserts.
