My mom makes the Jamaican black cake every Christmas. I've been helping her bake them every year since I was 9.When a Yankee/American hears that we are serving a fruitcake they think of that gross american fruitcake they serve every holiday that no one wants, lol. Our fruitcake is the best 🙂!

When baking, pre-heat oven....grease pans the set aside .Prepare all dry Ingredients. Prepare butter and sugar ...add eggs bit by bit. Add some of the dry ingredients, then fruits alternately. Using a wooden spoon preferably, using the cut and fold method. Start with flour and end with flour. After creaming the butter and the sugar and adding the eggs the mixer shouldn't be used. There is a big difference with the cake trxture.
I watch this video n gave a thumps up because I was reading ur instructions on screen and you not talking while mixing and that's a plus ... I just like how your mixer look way better than most video I have watch ... Only one advice thou go easy on the measurements because that's why the middle are cracked ... Apart from that I enjoyed watching...

( red wine, grape wine, etc.) you can also use only rum or only wine.. it’s not a must that you mix them.. remember rum (Wray and Nephew) has 63% alcohol so be careful not to use too much, ( use more wine than rum to get a balance). Some boil in water, others marinate for months in the wine and rum, and others do a bit of both. I liked the fact that you gave a liquid amt 1 1/2 c. Most videos don't, they just pour alcohol straight from the bottles which is hard to replicate for a fruit cake newbie. Thanks.

I use baking powder when I’m using cake flour and my cake still tastes and comes out good..However, if you are hesitant you can use all purpose flour and the right amount of baking powder....I hope this helps..
