  • Ultimate Christmas Fruit Cake - the time spent for this cake is definitely no regrets because it’s priceless. Once you know the way of making this cake, you will be back for this recipe every single year, because you will know how much worth this cake is as far as the price and a gift for Christmas. When comes to Christmas, you will want to make something special, whether for party, or giveaway or even using it yourself, this is the ultimate treat. The shelf life of this cake is incredible. You don’t have to worry about its expiration. You can keep up to 3 months in the fridge. Why? The longer you keep, the more this cake worth. I hope you’ll enjoy this one. Let’s get started!

    Ingredients:
    I am using 8x8x3 inch pan
    700g (4 cups) mix fruits (consist of cherries, apricots, raisins, plums, blackcurrants)
    50g (1/2 cup) glazed red cherries
    50g (1/2 cup) glazed green cherries
    1 tbsp orange zest
    180ml (3/4 cup) whiskey (you can also use brandy, rum OR gin) OR (orange or pineapple juice for non-alcohol)
    125g (1 cup) pecans, chopped
    125g (1 cup) cashews, chopped
    283g (2 1/3 cup) all-purpose flour or plain flour
    2 tsp mixed spice **
    ¼ tsp salt
    226g (1 cup) unsalted butter, softened
    225g (1 ¼ cup) light brown sugar
    4 eggs [check below for eggless recipe]
    1 tbsp molasses (OR jam)
    2 tsp vanilla extract
    1 tbsp orange juice
    2-3 tbsp flour (for coating the mix fruits & nuts)
    **if you don’t have mixed spice, you can mix:
    1 tsp cinnamon powder
    ¼ tsp nutmeg powder
    ¼ tsp cloves powder
    ¼ tsp ginger powder
    ¼ all spice powder
    __________________________________
    EGGLESS RECIPE
    700g (4 cups) mix fruits (consist of cherries, apricots, raisins, plums, blackcurrants)
    50g (1/2 cup) glazed red cherries
    50g (1/2 cup) glazed green cherries
    1 tbsp orange zest
    180ml (3/4 cup) whiskey (you can also use brandy, rum OR gin) OR (orange or pineapple juice for non-alcohol)
    125g (1 cup) pecans, chopped
    125g (1 cup) cashews, chopped
    283g (2 1/3 cup) all-purpose flour or plain flour
    2 tsp mixed spice **
    1 ¼ tsp baking powder
    ¼ tsp baking soda
    ¼ tsp salt
    226g (1 cup) unsalted butter, softened
    225g (1 ¼ cup) light brown sugar
    185g (3/4 cup) plain yogurt
    1 tbsp molasses (OR jam)
    2 tsp vanilla extract
    1-2 tbsp orange juice (add when you feels the batter is too dry)
    Instructions:
    1. In a glass jug or container, add the mix fruits, glazed cherries, orange zest and alcohol (or juice for non-alcohol).
    2. Soak overnight or even up to 1 week, in room temp.
    On the day of baking:
    3. Squeeze 1 tbsp orange juice and set aside.
    4. Chop the pecans and cashews, set aside.
    5. Strain the soaked mix fruits and nuts.
    6. Preheat oven at 140°C/285°F.
    7. Sift all the dry ingredients.
    8. In a mixer bowl, add butter (softened) and sugar. Start with low speed for 1 min so that they come together. Then switch to medium speed and mix for about 5 min or until creamy, fluffy and pale.
    9. Add eggs, one at a time. [for EGGLESS: add the yogurt, you may add all at one go). Mix until well incorporated.
    10. Add molasses, vanilla extract and orange juice. Add 1 tbsp first. (Second tbsp after adding dry ingredients, add only if necessary like if the batter is too dry)
    11. Add the sifted dry ingredients, in 2 batches. Use low speed so that no over mixing. Stop mixing as soon as the flour disappear. Do not over mix. (Add another tbsp of orange juice if needed)
    12. Add in the strained mix fruits and nuts. Set the strained alcohol or juice aside for later use.
    13. Pour into a 8x8x3 inch pan, greased and lined with parchment paper.
    14. Cut 2 pieces of parchment papers with a hole in the middle for peeping purpose. This is to prevent the cake top from burnt and overcooked. Place these papers right on top of the cake.
    15. Bake in preheated oven at 140°C/285°F for about 3.5 to 3.75 hours. Put cake on the lower rack.
    I know, yes! Bake for that long. Don’t worry if the cake will dry out, it won’t as we are not finished after baking :)
    16. Let the cake cool for 30 min.
    17. Randomly poke holes on the cake using a skewer. This is for absorption later. Brush the cake with the strained alcohol or juice.
    18. Wrap the cake with cling film, make sure you wrap it tight to keep moisture in the cake. Let it sit in room temp overnight or up to 2 weeks (if you’re using alcohol) TIP: the longer it sits, the better the cake will be. If you’re using juice, refrigerate after 3 days of being in room temp.
    19. Occasionally unwrap and brush the cake with more alcohol or juice.
    20. The cake will be ready for cutting and to serve.

      Hi. You can start soaking the dry fruits from now if you wish. I once soaked mine for about a year, then use them for baking this cake 2 weeks before Christmas, the cake is so flavorful and divine 😊

      I am also fond in baking fruit cake but I refrain from adding too much liqour but I prefer rhum around 3 tbp and it turned out yummy this recipe is a great help

    This is wonderful ....I tried it since we don't consume alcohol so I soaked the fruits in Orange juice ....its wonderful ...the only thing is it takes much time to bake bcoz I can't resist myself from the smell when it gets bake ....the cake is Yum my whole family loved it ♥️♥️♥️♥️♥️

      Daniya you can also soak them in pure black liquor tea. Comes very close resemblance to the alcohol. Try it next time!

    My mother from a tiny fishing village in Kerala baked a similar recipe every Christmas. This recipe must be over 100 years old. She used to bake it in an aluminium deep round dekshi with vegetable fat not unsalted butter and with granulated sugar and with coals! In the 80s she switched to unsalted butter and a cake oven which resembled a box placed over a gas flame. It still tastes the same although we are now using an electric oven and soft brown sugar! Evolving but thevoriginal method still was good. I love that there is no noise! Cant escape the noise levels in demos so you get 100/100.

    Hi Gracious Lady, thanks for sharing the recipe. First time baking a christmas cake, I halved the recipe and used Bailey (only had bailey) and cut the sugar amount by 70%. It turned out so so good, the flavour is super, my family loved it. Be baking again, going for the full recipe😋.

    I'm baking it right now. It's in the oven. I just cannot wait for it to bake, cool down, brush with rum and have it tomorrow!! I couldn't contain my happiness and so, I came here to comment. ❤️

      It came out perfect! I haven't tasted it yet, just feeding it with rum every other day. The 1/2kg cake measure took me 2 hours to bake. It rose slightly in the oven and felt very moist when I inserted a skewer to test the doneness.

    I tried the Vegetarian Fruit Cake and it came out so well. It's so ultimately moist and it's divinely tasty. Only think, I reduced the sugar since the fruits and orange juice itself have natural sugar. Thank you so much for sharing this healthy recipe. My friends loved it.

      @@rifavp8299 I did it as the recipe said and it was delicious. Fruit cake has a denser texture, so there is no need for a rising agent. Butter and eggs are already enough to make the cake rise and soft. (For the eggless version, I guess there are baking powder to help the rising and baking soda + yogurt to have the cake moist and softer as there is no egg).

    I made Christmas cake for the first time ever, using this recipe. I soaked some of the candied fruits a few days back in rum+ whiskey, bought more black raisins the day before and added them too. I doubled the quantity - made 2 best cakes I have ever tasted. My kids typically don’t like the candied fruits. But they can’t stop eating this one, I hadn’t noticed it takes 3.5 hrs to bake, I put it in the oven at 8.30 pm. Had to wake up past midnight to pull it out of the oven.     Awesome 👏🏽💐 we do our fruit cakes in the Caribbean this way too. We usually have our fruits soaking for months, up to years the cakes can be soaked numerous times as well before eaten,makes it moist and soft 🇹🇹

    Hi, I usually bake for 40-50 minutes on 175 degree Celsius. wouldn't the cake go dry or burnt if we bake for 3 hours even at 140 degree Celsius

      Yes it vary depending on the oven. ovens are different from each others and we have to adjust the time and duration by experiencing them. That is my experience. So go with your own oven's performance and keep some notes for next time 😊

    FAQ: Why do we need 3 ½ hours bake? Wouldn't it be overcooked?
    This is a traditional recipe where the original actually takes 4 hours, I have cut down to 3¼ to 3½ hr. This cake actually cooked at 1 hr, however, the flavor and color is not satisfactory. The long bake will help a well seasoned of the fruits and brings out the flavor, and you will get a nice dark color of the cake. And also because of this long bake, the cake can store in room temp for at least 1 to 2 months (only for alcohol)

    I am trying your recipe in a few days. Just one quick question: I normally bake my cakes for 30 to 50 mins. maximum, and at 175 deg C max. I was wondering if 3.5 hours isn't too long ? Would appreciate your response.

      Hi Sir. I hope I am not late to answer your question. Trust me on the 3.5 hour. I know it's long. But for this traditional fruit cake recipe, you will need that long to get that color and right texture of the cake. This fruit cake is no other cake because if you are using alcohol, I can tell you this cake can stay in room temp for at least a month without any problem. So you need that long bake for all these reasons too. Wishing you the best of luck!

    Thanks for sharing this recipe. I loved your recipe out of all the other recipes available on YT (I would've looked at at least 10). Baked the cake yesterday and it turned out AMAZING!
    I did add 1/2 TSP of baking powder and baked it on stove (15 mins on medium flame and 55 mins on slow flame) I used a 6 inch mould and reduced the ingredients by half of what you've suggested.
