If you don't remember JBC you're too young. I remember this show frim my childhood in the 90's and the host was another lady but I remember this one too.
Growing up this cooking program was a staple and her personality so warm and welcoming. The whole family would watch her together

This is awesome. Excellent and clear presentation. Ms. Mazie makes me proud to be Jamaican. My brother and I used to mix cake with our mother when we were boys. Me and him used to fight over the left overs in the bowl and the spoon for licking when she was done. Seeing Ms Mazie at work brings back warm feelings of the festive season in Jamaica.

Gosh man I strongly dislike social media trolls. If you don't like this recipe there are several other recipes on youtube and all over Google you can check out. Keep it moving.

The Christmas cake recipe that has been used since I was a child is from "The Real Taste of Jamaica" cook book by Enid Donaldson. I commented on your posts specifically because you were the only one being disrespectful and I can quote some of the things you have said on this thread. I believe that if YOU don't think this recipe is good instead of saying that Miss Miller's recipe is a "MESS" and all the other rude statements you made you could have suggested another recipe without being nasty about it. #KeepItMoving

Ms Maize and Grace brought a calm yet blissful ambiance at home. Growing up Grace foods was the brand of choice for my mom. If ever my siblings and I were sent to pick up groceries, we knew it was Grace items or nothing else. My mom would always speak of the quality of Grace products " di ketchup rich" today, it is a little challenging for me to choose another brand over Grace. I will definitely be using Ms. Maize's cake recipe.

I love the low decibel Christmas music in the background. The cracker crumbs is a great idea, as it crowds out the flour gluten; and prevent overworking the batter. Same as cornstarch does. SWEET SURRENDER - YESS!

just add red label wine to a blender add the fruits then blend them,if you dont have red label wine you can use a sweet port wine.

She used it to soak or blend the fruit. That is what you need it for, not pure it raw in the mixture. I hope that this help.

I do not think Jamaican measure in grams. They measure in pounds and ounces, tbs and tsp.

Try mixing in one direction. For a lighter cake I add say I was going to add 3 teaspoon of baking powder I do 2 and 1 baking soda or it could be your flour swive it and my cake always comes out great I hope this helps

i dont know what i did wrong my cake turn out dry what the heck i folllowed everything should i based the cake with wine after its finish
One lazy trick i do is place a metal tray with water underneath the baking tin in the oven. Somehow it keeps the moist texture of the cake. But you are suppose to soak the cake in rum after and that will give it moistness, another thing is baking on a low temperature to keep the moist texture. Hope this helps!. If your lazy just use step one thats what i do

Thank you Mazie. We miss you for sure. In the written recipe it stated 3 cups red wine, 1 cup rum and 3 cups blended fruits. I didn’t see you add the rum and wine to the batter, did you add it in the blended fruits then incorporate it into the mixture or is it to pour over the baked cakes?

I'm a diabetic and also a chef who loves black cake. But because of the high sugar content of dried fruits and rum, I don't use any added sugar to my black cake mix. I have been doing this for years for my family and other diabetics, and you can't even tell that it has no sugar and it is not missed. Give it a try. Use whatever recipe you choose, just omit the sugar and NO sugar substitute is needed.
My mom is Diabetic too and would love to eat cake. So should I just cream the butter? And add all the other ingredients and bake?
@@Theunstoppableone3515 yes. Cream the butter, then add the beaten eggs a little at a time. Then the other ingredients as usual. It will be great. All you are doing is omitting the sugar, and following the rest of the recipe as directed.

In the demonstration you use 1 lb butter 1lb sugar 1lb flour in the recipe you use 8 ozs sugar and butter to 16 ozs flour.

Mi nuh tink mi can manij di tuff crackas inna mi cake Mazie, but I suppose it is used to keep the cake moist. U hand dem trang Mazie, only u can cross it. I am amazed she did not even dip her finger in the batter and licked it off, that's the best part. The cakes were beautiful. Perfection!
