    RECIPES
    For The Fajita Chicken:
    1/3 cup lime juice, (approx. 2-3 limes)
    1/4 cup pineapple juice, no sugar added
    2 tbsp low sodium soy sauce
    1 clove garlic, minced
    1 tsp. ground cumin
    1 tsp. paprika
    1/2 tsp. red pepper flakes
    1 tsp. sea salt
    1/2 tsp. ground black pepper
    1/4 cup cilantro chopped
    2 tbsp. olive oil
    4 6-8 boneless, skinless chicken breasts
    For the Fajita Bell Peppers:
    1 white onion, thinly sliced
    1 poblano chile, thinly sliced
    2 red bell peppers, thinly sliced
    1 green bell pepper, thinly sliced
    1 tsp. sea salt
    1/2 tsp. ground black pepper
    1/4 tsp garlic powder
    For the Lime & Cilantro Black Beans:
    1 tbsp olive oil
    3 cloves garlic, minced
    1/2 jalapeño, (1 tbsp) seeded and finely diced
    1/2 tsp cumin
    2 15- ounce cans low sodium black beans, rinsed and drained
    1 cup low-sodium chicken broth
    2 tbsp fresh lime juice
    2 tbsp fresh cilantro, chopped
    1 tsp. sea salt

    Would love a breakdown of the calories in this, I don’t do the beans and change to whole grain rice so be good to get individual calorie elements in the description. Great video as always, super tasty. Chicken is delicious with this marinade.

    No sauce? it's not fajitas without reducing the sauce.
    Personally, I buy bulk chicken breast for like $10. I put it all in a pressure cooker with some salt and pepper, giving me 8 breasts ready to go for the week for whatever meals I want. If I want fajitas, I just put a very little bit of veg oil, half cup of water, and taco seasoning in a small gravy pot (I used to do my own seasoning, but this is just so much cheaper and quicker, and wastes far less dishes)....while that is getting up to temperature, I cut up how much I want from my saved portion of breasts, whisk up the sauce and drop the chicken in, turn it down. While reducing, I get my shells ready, little bit of sour cream, some cheese, and practically done. You can do vegies if you want, or the black beans stuff, but I'm a man, I eat meat, cheese and bread, that's the basic food groups. Total cost for fajitas this way $2.50ish (for 1 breast, feeds 2, but I eat both servings because I like food).
    BBQ - preheat oven to 400 and put a rack near the top, pull out and cut up how much you want, lay on aluminum foil in a baking sheet, brush on the bbq sauce, throw in oven for 5 minutes, turn it to broil for 1 minute, turn it off for 1 minute, pull it out. Best tasting and at about $1.50 per breast.
    Chicken and Dumplings - bring some chicken stock/broth to a boil (with salt, pepper, garlic), while that's taking time, roll out some pillsbury grands butter biscuits and cut them up into quarters.....throw in celery/carrots/whatever into the boiling broth, followed by the biscuits, stir occasionally for maybe 7 minutes (depends on how rolled the dough is that you like)? stir in some 'cream of chicken' and 2 breasts of cut up chicken. Cover on low heat for 20 minutes, stirring only about every 5.....serves about 6. Cost per person is about $0.92.
    My favorite, chicken fettuccine alfredo - boil the noodles while you cut up chicken and bacon, leave noodles in strainer over a bowl to catch some of the water while you reheat the chicken with some strips of bacon in the same pot you used for noodles (with some chili powder and pepper). When the chicken starts to brown, add the alfredo and some of the pasta water, stir for about 1 minute to get it back up to temp, add noodles back and stir up for another minute. 1 breast can feed 4, cost per person is about $0.54.
    other ideas:
    cheaper and tastier version of lunchmeat sandwiches (cost $0.70)
    chicken, turkey gravy, cornbread and mash, it's weird but tastes so good (cost $1.05)
    fried chicken with fries or mozzarella sticks (cost $1.00ish)
    I know people will say "double cooking chicken will dry it out"....and they would be wrong. If you know how to work a pressure cooker properly, you can make very moist chicken to save for all of these dishes that will stay moist even after cooking it again. You don't have to worry about sanitizing counters except for the "batch day," all the other days are already "clean" food handling. AND, the best part, you don't have to eat the same thing day after day after day....the chicken is the only thing that will go bad, all other plate additions can be bought in bulk and stored whenever you are in the mood for it, cutting anywhere from 10 minutes to 45 minutes off of your prep/cook time.

    The beans are so good not spicy but good, fajitas was a 2/5 for me whole lot of ingredients for them to end up flavorless
