  • The other day, I was looking for a cake pan on the Net and ended up finding many 2 ingredients chocolate cake posts! This idea must be popular in Japan!!!
    I modified the recipe in the way I think is good and it came out amazingly delicious :)
    This is optional, but I coated the cake with some homemade fruit brandy for an extra aroma and moistness.

    2-Ingredient Chocolate Cake
    Difficulty: VERY EASY
    Time: 1hr
    Number of Servings: 6
    Calories per Serving: 200Kcal
    Necessary Equipment:
    15cm (6inch) round cake pan
    electric mixer
    Ingredients:
    3 eggs
    3 bars of chocolate (total of 165g = 5.8oz.)
    Directions:
    1. Preheat the oven to 170C (338F). Separate the eggs and place the whites in a large bowl. Let your egg whites sit in the refrigerator to keep them cold until you are ready to use them (which makes the meringue more stable).
    2. Place the chocolate (broken into pieces) in a large bowl. Melt the chocolate in a double boiler over hot water (60C/140F). When the chocolate has cooled, add the yolks and mix with a whisk.
    3. In a large bowl, whip egg whites with an electric mixer until firm peaks form. *If it's thick enough, you can turn the bowl upside down without it sliding out.
    4. Add 1/3 Meringue into the chocolate batter and blend well with a whisk. Then add the rest of the Meringue 1/2 at a time and mix well with a spatula.
    5. Line the round cake pan with parchment paper. Pour the batter into the pan and drop the pan lightly on the counter to raise the air bubbles out of the batter.
    6. Bake at 170C (338F) for 30-40 minutes.
    7. When they are done, cool in the pan until you can touch it. Then place it on a wire rack to cool completely.
    You can brush the cake with syrup (rum, kirsch, brandy, or any kind of liquor you like) and/or dust with powdered sugar (confectioner's sugar) to finish. You can serve it with whipped cream if desired.
    You can either serve immediately or chill in the fridge before serving! You can also keep in the freezer for a week :D

    Tried this for my dad's 75th birthday and it was delicious. I used dark chocolate orange almond chocolate bars (purchased from Aldi). It was super simple to make and very rich and delicious! Thank you for such a great tutorial and recipe!!

      +Greekgirl36 The smell isn't too eggy? Once I tried a chocolate mousse recipe, it was pretty simple, eggs and chocolate but the smell of with was so eggy, but the taste was pretty good.

    This is still one of my favorite recipes of all time!! It's soo simple and it makes a delicious cake!! For everyone making this, I recommend doing it exactly according to recipe the 1st time and then experiment with different chocolate (for example half dark, half milk chocolate), add spices like a pinch of salt, cinnamon or ground chili or add a teaspoon of coffee to enhance the flavor. But the original recipe is already wonderful

    My cake came out great!!! Tried with 70% chocolate a lil bit on the bitter side but I still like it. I will try with semi sweet chocolate next time. Is crazy how the texture taste like it has flour in it! Thank u for the recipe!!!!

      1/10th of $95 ? Where does 3 eggs and a chocolate bar cost $9.50 ? I can make that for about $1.20 in the USA.

      @@cyann410 I'm in the USA too (the South no less). I actually made double batches (6-eggs/6-bars cakes) and that was with the mid-tier eggs and dark chocolate.
      The $95 cake was in a Dean & DeLuca catalog from a decade ago (they're bankrupt now I think), but they were known for their "upscale" (read: Hipstery AND Pretentious) nature. The cake had a fuller recipe (the traditional Gateau has a lot more to it) but it had a bunch of European-sourced ingredients like Swiss-sourced chocolate, really fine flour, etc. etc.
      It's no surprise they closed tbh.

      Actually, I was really surprised about the lower calorie content for a chocolate dessert. It's almost like angel food cake (which uses whipped egg whites too). It helps when your dessert is mostly made of air! 🍰

      Of course you can make it by hand! It's just much much harder work... I whisked for about 40 minutes... hey, consider it workout! ;)

      I've whipped egg whites to stiff peaks by hand before. It can take about ten minutes, but it's doable. Make sure to use your shoulder, not just your wrist, or you'll be exhausted! Hold the bowl at an angle, because what you want to do is trap air bubbles inside the egg whites. Don't use an aluminum bowl.

    I was taught in a baking school that a round crack is a must and perfect for this cake but a lot blogger trying to avoid the crack on top. Is crack on top the authentic way of making it?

      the cracks on top are what make it authentic, if it isnt cracked it doesnt look half as rusting. its as if those folks are saying they want their baguette to look like one big lincoln log made of bread

    I do have 1 question! Can I split the batter in half, 1/2 use dark chocolate, 1/2 use white chocolate, then when pour in pan together to make it a marble cake?? Or will the batter be too runny for that idea?

      Definitely 165g in total! Each bar is about 55g, so you can also get a larger chocolate bar of the same equivalent!

      ***** You know that gâteau au chocolat just means chocolate cake, right ? And that a real "gateau au chocolat" is made with more than two ingredients ._.

      Sylvia FusRoDah 'Gateau au chocolat' is a rich chocolate cake and the desired outcome is a thick chocolate core inside and she achieved that effect + she made it healthier by omitting butter which is also suitable for ovo-vegetarians.
      If you're talking about 'other' ingredients, it'd only be flour and butter. However, there are several ways of making cake and she went by the meringue approach, which totally fine.
