      @@FoodMadeSimpleReal Thank you again! We've been making this recipe now for a while, found out the best way is to mix the popcorn seeds with all the ingredients thoroughly in the bottom of the 8 Quart Stainless Steel Stockpot we only use for popcorn; then we also mixed some of the Flavacol Seasoning Salt in the Ghee and poured that over the top of the popped corn, then tossed until all the popcorn was coated evenly. We occasionally still get a few burned kernels.

    Your jambon beurre is perfect because it has what it takes, no more, no less. You put in sufficient butter and ham, which is crucial for its taste and that's why in so many bakeries jambon-beurres are not good, they are dry. Very often, they try and compensate with tasteless cheese and out of place dry salad, but it doesn't make it any better. And it's not the same recipe anymore.

      That would be at Ferdinando’s Focacceria. One of two places in Brooklyn where you can get panelle. After mt last visit however, I will not be returning. The panelle special is now $9. They’re making them smaller, putting less panelle on the sandwich, and they have abandoned the traditional sesame seed bun for an unseeded bun that doesn’t taste as good. Keep in mind that the ingredients cost next to nothing. In its current iteration this sandwich has a value of about $4. Once upon a time the sandwich did cost $4 and it was bigger and better prepared.

      Made it last night and it turned out amazing!! A couple questions though, do the movie theaters use actual clarified butter or a more processed butter type product? Because although it turned out amazing, I could taste the clarified butter (which was great) but I do not recall tasting this when I go to the movie theaters, so was just wondering if they use something different. The kernels I got as well popped into those ball type popcorn, which was great but do the movie theaters use more of the butterfly type? Thanks again for your video and help in this! =) @@FoodMadeSimpleReal

    • @FoodMadeSimpleReal
      @FoodMadeSimpleReal 10 місяців тому

      @@xx-ix7hg so glad you enjoyed. At one time all movie theaters used real butter, specifically clarified butter aka Ghee. Ghee has milk solids and water removed so it would not make the popcorn soggy like regular butter people typically use at home. Unfortunately clarified butter is very expensive. This spurred theatre chains to look for a less expensive option. This gave birth to what is used today which is just a soybean oil based product with other added ingredients. So basically what you get at theatres today is butter “flavoring” aka butter topping. Odell’s Supurkist is a popular brand theatres use which is also sold on Amazon. With that said, although it is 2-3 times more expensive there are still some independent theatres still using real butter such as the Ghee/clarified butter. I hope this helps

      We usually don't put mustard in a jambon beurre (also known as a "Parisien"). But you can make it however YOU like :) It's so simple that you can't really go wrong changing a thing or two to your liking. My go to living in France is to butter both sides, remove a layer of ham and put some emmental on top of the ham. Or use cured ham and switch the emmental for some tomme de brebis. Putting some salad and a couple slices of tomatoes, or even sliced hard boiled eggs is, is pretty popular as well.

We do not use buttery flavor coconut oil so try the coconut oil in the video (avail on Amazon). Also make sure your placing the flavacol in with the seed when you add the seed to the oil as this helps the salt flavor infuse with the kernels as they pop. If your using reg household butter that also will not give you the right flavor.
