- the seasons begin to change, the temperature is getting colder and leaves are beginning to fall here in the US, its a wonderful time for comfort foods and there is nothing more satisfying than a classic American Cowboy stew. I love this cowboy stew because I work long hours and I can make this all in one pot and I can freeze portions in an air tight container and use it through the week or later in the month so that works for me. Ingredients
• 1 lb ground beef
• 1 packages kielbasa sausage, sliced into 1/2 inch pieces
• 3 garlic cloves, minced
• 1 onion, chopped
• 1 (14.5-ounce) cans of peeled and diced tomatoes, drained
• 2 medium baking potatoes, peeled and cubed
• 1 (10oz) cans of pinto beans, drained & rinsed
• 1 (15.2oz) can whole kernel corn, drained
• 2 (10.2oz) cans diced tomatoes with green chili pepper, with liquid
• 1 (10-ounce) package frozen mixed vegetables
• 2 cups chicken broth (or beef broth)
• 1 cup of water
• 1 teaspoons ground cumin
• 1 teaspoons chili powder
• 1 tsp salt and pepper, adjust to taste

I didn't know cowboys had their own stew! Whatever the case this seems perfect! Definitely looks so hearty and perfect when it's cold out, and I love the potatoes in here! Great to serve with that bread, yum!
Yes Cowboy stew which was made on the range typically uses ground beef rather than stew meat like an old fashioned beef stew. Both versions are delicious but the Cowboy stew takes much less time as they didn’t have a lot of time to cook out on the trails driving cattle and what not.
