- This is my favorite Pumpkin Soup Recipe. Pumpkin Soup is a wonderful comforting creamy soup that tastes amazing and not mention its so easy to make and all in 20 minutes! In addition pumpkin soup is full of nutrients so its the perfect fall, winter or heck summer soup. Ingredients
• 1.2 kg / 2.4 lb sugar pumpkin (eating pumpkin) OR butternut squash , unpeeled weight
• 1 onion, sliced (white or yellow)
• 2 garlic cloves, peeled whole
• 3 cups (750ml) vegetable or chicken broth/stock (can use low sodium)
• 1 cup (250 ml) water
• 1 Tsp fresh ginger (grated)
• 1 Tsp Ground Cinnamon
• 1 Tsp Sugar or honey (optional)
• 1/2 Tsp Salt and pepper (or to taste)
• 1/2 - 3/4 cup (125 - 185 ml) cream , half and half or milk
