Hey there! I’m Morgan.
My husband and I live on one acre of land in South West Ohio with our two dogs, two cats, turtle, fish, and chickens! Whew, I know it’s a lot! Well at least for us, we haven’t quite reached farm status yet.
Our everyday lives consist of caring for all our pets, working our 9-5 jobs, and taking any steps we can to become more self sufficient, grow our community, and try to live our lives to the fullest.
My hobbies consist of a lot of food preservation, meal preparation, and growing my own food. You can expect at least one video a week from me regarding one of these topics and perhaps an additional video every now and then when my schedule allows for it.
One day I’d like to have my very own farmhouse complete with at least a few acres and the more renovations needed, the better! I want the chance to make a place my own and put all of the old antique cozy charm back into a home. I also aspire to have dairy goats someday! Hope you’ll stay along for the ride!

Assembling a Snap Lock Coop & an Update on the Ollie's Coop
Hey guys! A couple of months ago we upgraded our girls to a new coop. We decided to go with a plastic snap-lock coop. Here are our thoughts and what the assembly was like!
Dimensions for the Coop Base:
37" x 40" "Square" Made of 2X4's (actual dimensions 1.5" x 3.5")
I used four pieces that were 37" long to make the square. For the legs cut down a 4X4 into 4 equal pieces. I used deck screws to hold the main frame together and 1/4" x 5" power lag screws to hold the legs on. These screws do have a star head that you need a special T30 bit for but the SPAX brand from Lowes seems to be the cheapest option.

So it’s not a concern you need to can 75 minutes ,but it doesn’t start until you close the valve to start it processing 70 minutes?

❤❤❤ my Nesco!! I only use it for canning. Never had an issue with siphoning or failed seals. Just used the last of the hot Italian sausage I canned over a year ago. So good !!!
We have had a Nesco for almost two weeks but haven’t used it yet - life got in the way. Thanks for your video. Very helpful. Like you, I also watched RoseRed Homestead’s review and liked the results based on her testing with a Data Logger. Looking forward to canning chicken next week. Thanks again.
I’ve had that happen to me and got scared but I then switched it to airtight and it continued to count down. I love my Nesco!

Can anyone comment on how much of the canning water is lost during processing? Two quarts drops to around two cups in the bottom below the rack. Is that okay?

To bad they didn't come up with a stainless-steel insert...I would have paid the extra for it. I won't be cooking in the aluminum insert it comes with.
What did you put in the jars besides raw chicken? I just bought one of these and am very green to canning. Thank you for this video it helped me a lot!

I haven't cooked in mine either. If the nonstick coating wasn't flaking I might consider it if I had a particularly busy cooking day. I wonder if they'll come out with a stainless steal liner pot for them.

Dumb question how to know if food is freeze burn
Not a dumb question! So sorry for the late reply, I just saw this! Usually I know something is freezer burnt when it has a layer of frosty looking ice on it. Sometimes if there's only a little bit it will still taste fine. The best way I found to prevent it is to make sure all surfaces of the item are tightly wrapped, usually in plastic wrap, as much as I hate using it.
I too wish the inner pot was stainless steel rather than non stick coating. I had hoped to use it as a pressure cooker in addition to a canner.
I was really wanting someone to talk about the Non Stick coating. It seems like most of the pressure cookers have stainless steel now. The vinegar makes a lot of sense. Thanks
Stainless steel would have been so much better! If they came out with a replacement pot I would consider getting it in stainless.

I poured the hot broth I was cooking it down with over top of it but just chicken besides that!

I got a nesco a few days ago. im not sure if im keeping it. The seal hasn't sealed in the beginning the 3 times I've used it. I saw steam coming out in the front and knew it wasn't right, so i cut it off and wiped the rim and the seal and restarted all 3 times. 1st time I had two bad seals 2nd time none 3 time the lids kept popping sealed then the broth bubbling would push it back up. It was popping up and down. And i let it cool slowly but all sealed. No siphoning though
I am curious, did you use Qt Regular Mouth Jars instead of Wide Mouth?
@jackscrafts9202 it was the seal on the canner that wasn't sealing correctly so I warmed it and oiled it and seems to be working right now. But to answer your question it was wide mouth qts

My first unit did something similar, but I contacted customer service, and they were fabulous! Melissa took me through several steps to decide whether it was user error or a defective machine. She authorized a replacement (which took a while...backordered...must have been a popular Christmas gift).
@pamelameyer5371 I washed it in warm water and oiled it, and wiped off the oil, and it worked fine. But I thought in the beginning I was sending it back. Now, every time before use, I oil it .
This is my 1st visit to your channel. I get as much pleasure watching other people canning as doing it myself. Do you know that you can put a rack on top of your jelly jars and then put more jars in the canner instead of processing two batches?
I also use the rack from my pressure canner instead of the one that came with water bath canner. You can fit more jars in that way.
I totally forgot I could do that! I’m just so used to doing pint jars 😄 thank you! And I will definitely be switching out my WB rack for my pressure canning rack if it means fitting more. My rack is getting pretty rusty and beat up anyway!

Patience, grasshopper! The digital will chase for sometimes up to 20-30 minutes! I have loved my Nesco for 3 years. I’ve never had any siphoning issues or a failed seal.

A. You could have used 75 mins for that broth and chicken. B.wide mouth jars arent the greatest for broth you have to make sure they have calmed down in the canner itself before removing them they are volatile, angry .... Nice video anyway.. Real life right?
Of course! Yeah, after thinking about it I’m wondering if I accidentally quick released the pressure on it without meaning to. I was pretty tired by the end of the night and after using my pressure cooker earlier in the day it’s definitely possible I got a little confused for a minute lol

I bought the presto digital canner last week and my experience is that it beeps until you do the next step, (fill jars, heat jars, put weight thingy on so it pressurized) it doesn’t move ahead.
Yes, I’ve noticed too that the time it takes to get to pressure can vary depending on how hot the jars are when you put them in. Which makes sense but I definitely thought there was something wrong a few times when it seemed to take forever!
Nice and practical - thanks for sharing! I also really enjoy seeing pantry tours. Mine is a mess right now (crazy summer), but I plan to do a tour as soon as I do some damage control. It's the "master bedroom" of my house and I use it for storage, too. MICE ... UGH! I dont have inside cats, but there are several "barn cats" here (they don't confine themselves to just the barn) - a few years ago, I left my crawl space open (no basement) and a few decided to winter under my house. That eliminated the mice problem by about 99.5%. Blessings, Joanne in SW MO
Thank you! WOW! A whole master bedroom for pantry/storage, that sounds wonderful! I think that's what happened to us too. The door to our crawlspace wasn't closed all the way and I think it was like that for months before we noticed and that's around the time when the mouse problem started. Hopefully we've seen the last of them. . . for at least a couple years

Invest in a tube of caulk and caulk EVERYTHING. Otherwise it is unlikely to last the year. ALSO, raccoons are strong and can break into stuff. Smart to install better locks, and no, moles wont hurt them but rats will. ETA: dogs are sone of the worst predators. They kill for sport. Anchor that to the ground as it looks easy to tip over. Oh and congratulations. You will love having chickens. Plan for losses. They happen. 😥
Thank you! I have a tube of caulk lying around here somewhere. I know what I'll be doing this weekend! I am worried about our hound dog chasing after them but she never gets left alone outside so fingers crossed we won't have any problems. I've heard about so many chicken losses that I feel like I've mentally prepared myself for if/when that happens, but you never really know until it happens to you.
$150.00???? Perhaps turn ot into a Barbie house or something. wont be a total loss. 😊

Yeah, I was worried about that! I started putting a towel over the top as the steam releases but I’m not really sure how safe that is so I started using it strictly on the island now.
I found it to be too small, my broody mama can’t fit through the entrance to the nesting box, my baby chicks love it, it’s okay for starting babies.
Oh, thanks for the heads up! I may have to work on a back up plan then for when they’re bigger in a few months. I was already worried about not having enough nesting boxes in there but it’ll definitely be a problem if they can’t fit through the door! Lol

Great video! Ants..As soon as I see ants I put half borax and half sugar in a tiny jar poke holes in the lid and place it where you can see ants. In a short while many ants will enter the jar and then take the borax and sugar back to the nest and feed the other ants and the queen. This will take out the ants. Another good item for ants is Terro ant traps. They are pre made traps with sugar and borax. We live in an area that has 75 feet of sand below us and a quarter of an inch of soil on to. Ants are a major problem an these work. and are totally safe.
I will have to try that, thank you!! We put out traps last year and I can’t remember what brand they were but they did a terrible job. The ants weren’t even interested in them! So I gave up and just started spraying everything down with that natural spray every few days which helps but doesn’t get rid of them completely.

Black! And pretty small too
If the dry version doesn't work, try the " syrup" version, same idea but with a bit of boiling water to make a syrup. That works for us.

This spring, I just could NOT keep up with the weeds in the garden. It rained any time I had some spare time, work got busy, we went away to visit family, etc. The weeds literally got taller than my pepper plants. It turned out fine. We used the weed-eater to trim around the plants, then mowed the rest. I didn't get out half the plants I wanted to, but my peppers thrived because they had shade while growing. My tomatoes have given us enough to eat fresh, and other gardeners shared extra for me to can. Things calmed down and I got a small fall crop out, and have been able to keep up with the weeds a bit better. And if it gets busy again, I'll do what I can and enjoy what I can.
We just did the same last weekend. Busted out the weed eater and lawn mower for the garden! I've been lucky this year as well to have a family member give us enough tomatoes to keep my pantry stocked up on. It just so happened that they were too busy to put up everything from their garden this year. It's kind of funny how life works that way sometimes. I'm so glad you were able to get some fresh eats and extra from friends!

I have contemplated getting this brand but was concerned the lid is hinged and doesn't come off. Have you found this to be a problem for cleaning it? Thanks.
Nope, no problems! It’s a little bit awkward to do but the lid comes off for cleaning. It slides off of the hinge once it’s open.

This video was good to see. I have the tendency to think I can get more done than is possible. I’m trying to limit myself to preserving only one thing per day.
I have the same problem as well sometimes and then end up staying up wayyy to late to wrap everything up! Lol luckily I’ve been able to keep the late nights restricted to weekends so far this year.
We made sausage a few months ago and I pressed the sausage meat out like you would biscuit dough and cut the meat with my biscuit cutter. I had seen Mrs Lori do it that on Whippoorwill Hollar and it worked great! I then laid it all out in layers on cookie sheets and flash froze before vacuum sealing. We did 92 patties that day. It's really good!

Hello! Last year was my first year using the weed fabric over the whole garden, but yes my plan is pulling it up every spring and tilling and amending it before putting it back down :) I think I should be able to get a few seasons out of it!
