Not very long ago, I have started making my own Kimchi.
It is easy to assume that most Koreans know how to make their own kimchi at home somehow, but the reality is that many Koreans receive kimchi from their mother/grandmothers, and many young people do not feel the need to learn its complicated process.
I too enjoyed the luxury of my Mum's labour, even though I had my own family and child, and thought it would last forever.
But my reality changed rapidly after my mum passed away, and my daughter became ill.
Since we needed to change our diet completely, almost every food was cooked from scratch, including the condiments and sauces. I had to master not only kimchi, the staple in our Korean diet, but also many dishes like the bone broth that I had never dreamt I'd cook.
Now it has become my passion and joy to be around at the kitchen, preparing meals and experimenting on new flavours.
I hope you could find Korean cooking easy and simple too.

I'll be honest. I don't pull out the bones and save the boiled water/broth in batches. When I make this broth, I just keep adding more water into the pot and keep boiling it for about 1.5 to 2 days. For over night, just make sure it is filled up and then just turn down the heat to low and let it simmer. Then let it cool and refrigerate (or if it is winter put in the garage or front porch); then skim off the fat and freeze the broth! My grandmother did it with way and I do it too. Never burned down the house!

Did you place the rice and ingredients when they were still warm?
Hi, it's ideal to place the rice on the seaweed sheet when it's still warm ( not hot! ) but the other ingredients are supposed to cool. Hope that would help.🙂

this is the best video on how to make selleongtang! Simple instructions and great visualization. First time in years my broth was finally able to achieve the milkiness. I love the two part video because it really emphasizes that this broth does take 2 days (technically 3 with the overnight soaking). Careful with carrots, they have a lot of carbs... you can technically eat them on keto, but have to measure them carefully. This looks like a lot of carrots to me?

You can also use other ox bones like leg or spine using the same method, BTW tail bone is the greatest of all. (and the most expensive ox bone in local Korea)
It used to be so cheap--EVEN FREE when my mom came over in the late 1960s until the late 90s to the next millennium. I BLAME FOOD NETWORK AND FOODIES. grrrrrr. lol

Can I ask, what is your room temperature for fermenting the kimchi?
The indoor temp where I live right now is lower than the typical Korean household. If it's around 17℃- 19℃ in winter, then it'd normally take at least 36hrs for better fermenting. Hope it works out for you. 😄

This isn't kimchi this flavored spicy cabbage real kimchi fermented is with either salt sugar or vinegar or all for a few days

It's a little tricky to answer. The rice’s texture becomes harder and less flavoursome in cold temperature, so it’s possible, but it’s not recommendable to keep the Kimbap in a fridge over night. What I normally do, when I have no time to pack a lunch in the morning, I make 1 or 2 Kimbap rolls beforehand and then warp the whole rolls together with a baking parchment paper & cling film. Then store them in a container, before putting in a fridge. You have to slice them in the morning, but it works for me. Good luck! 😉

Well done! I didn't succeed either at first. Making Kimbap needs trial and error, but you'll master eventually after a few time of trying. Just remember that when you roll, tucking in all fillings from the bottom, you need to press down the ingredients with fingers. Good luck! 🧡🧡🧡
Use a SHARP straight edged knife and spread light coating of sesame oil on the sides of the knife. Use light pressure as you cut.

Hi, I boiled with medium heat for 20mins at first. Then reduce to lowest and simmer for another 40mins. 😀
