The Perfect Winter Soup: Short Rib Soup/갈비탕/[bluekimchi]

  • The beef short rib soup (Galbi Tang) is widely enjoyed as one of the most nourishing soups in Korea.
    The flavour of soup is deep, yet the short ribs are very tender, they just fall off the bones.
    When it’s chill and dark outside, Koreans look to warm nutritious soups to take care of our body.
    We believe important nutrition are come from good food, there are classic stamina dishes for each season.
    Beef short ribs soup is perfect for the autumn/winter and it’s extremely easy to prepare.
    You just need beef short ribs and some vegetables.
    Sometimes, I don’t even use any vegetables, and still it’s very delicious.
    Please try to source some good quality meat, ideally grass fed meat, from a local butcher.
    As it’s a slow cook dish simmered for about 2hrs, and you’ll enjoy the liquid as much as meaty ribs, the quality of meat is everything for this dish.
    If there is some soup left over, save it for later use as it can be a very good stock base for homemade ramen or noodle soup.
