    A unique aspect of Korean food culture is the number and variety of side dishes present in a single meal. Kimchi is a famous example of such a side dish.
    With a different types of ingredients and sauces, you can pick and enjoy different flavours in a single sitting.
    And you can increase your intake of vegetables that you don’t normally consume in a tasty and pleasurable way.
    This is a typical meal found in Korean homes, and what we refer to as home-food. A single meal compromised of side dishes would be well-balanced and nutritious.
    Typically, one makes 3-5 number of side dishes on a free day to store in the fridge, and then proceeds to mix and match the dishes to eat with rice each meal.
    There are side dishes that be stored for a long time, such as kimchi, but normally the side dishes are made to last about a week.
    Braised side dishes are made by brewing ingredients in spiced soy sauce, so it serves as a very delicious condiment to rice.
    The reason one activates walnuts:
    According to Sally Fallon Morello’s book, “Nourishing Traditions”, all nuts, grains, beans and seeds have physic acid and enzyme inhibitors. These are toxic to the body. Through soaking, the toxins are neutralised and it makes it easier for us to digest the food, and to absorb it’s beneficial nutritions.
    *Ingredients
    4. Braised Tofu :
    400g firm tofu
    1T cooking oil
    100ml water
    50ml soy sauce (tamari)
    2T chopped spring onion
    1T maple syrup
    1T minced garlic
    1tsp chilli powder
    5. Pickled Cucumber :
    1 cucumber
    1/2 onion
    1/2T sea salt
    1tsp vinegar
    1tsp sesame oil
    6. Caramelised Walnuts :
    200g walnuts
    1T maple syrup
    2T water
    1tsp soy sauce(tamari)
    1tsp honey
