Vegetable Rice One Pot - Nutritious Rice Hot Pot/영양솥밥/[bluekimchi]

  • This rice dish is a simple one pot meal that you can easily share with family and friends.
    We Koreans call this dish as a healthy or nutritious rice hot pot, as you can have various ingredients in one pot.
    As the rice is cooked with all ingredients in a pot in the beginning, the subtle flavours are well married to each other.
    Like bibimbap, this is a mix and match dish, so you can add other vegetable if you want, like sweet potato or bean sprouts, you can even crack a raw egg on top, just before mixing the pot.
    There are many variations for this dish, but the ratio of the pre soaked rice and stock is the same.

    * Ingredients (2-3 people)
    300g pre-soaked rice
    5-6 dried mushroom
    5-6 kombu dried seaweed
    frozen edamame beans
    5-6 chestnut
    1/2 carrot
    1/2 parsnip
    1 spring onion
    1 chilli
    2T soy sauce
    2T sesame oil *
    *extra for cooking
    gochujang (optional)
    jujube(optional)
