- White kimchi is mild variety of kimchi and the flavour is refreshing and light.
It doesn’t have chilli powder so instead of the usual bright red, it’s the pale colour of the original cabbage.
White kimchi is made with brine, and you can serve them both because the brine itself is also delicious to have with your meal.
The tangy flavour gives a balance to the meal, especially when it’s accompanied by Korean bbq or spicy dishes.

*Ingredients
3 korean (napa) cabbage
300g Korean sea salt
600g korean radish
1 pear
1 onion
1 garlic bulb
4-5 spring onions
1-2 red chilis
25g ginger
anchovy stock 550ml *
filtered water 2L
extra water 250ml
sea salt 3T
rice flour 2T
