You are honest and give us a great insight into what "normal" Japanese people will cook and eat at home. I wish you would have more followers, because I think that your channel deserves it. But I guess, it might take some time to achieve that.

    It seems that you got a tasty and varied dinner, with ingredients from the fridge and basic sauces and spices. I often cook "what is left in the fridge", not because I cant go shopping, but because I want to use up ingredients that might otherwise "go off". Tonight it will like that. Simple and tasty. A corn on the cob, that I first boil in salted water, and then grill with olive oil, spices and at the end a knob of butter in a pan. And a salad of cherry tomatoes, feta cheese, greek olives and fresh basil, with olive oil, lemon juice, pepper and salt.

    Thank you Sho for another good video. Is the fried tofu crispy after being toasted ? In Switzerland, most people eat roastbeef in a restaurant. Its normally served with french fries and sauce tartare. Sauce tartare is mayonnaise, mixed with finely chopped pickled gherkins, onion, capers, parsley and salt and pepper.

      Thank you again for your comments. When fried tofu is baked, it becomes crispy and crunchy, but be careful, as it burns quickly. Roast beef is often seen at hotel buffets in Japan too. On this day, I found a good deal at the supermarket on meat that looked good for roast beef, so I made it. The sauce you gave me sounds delicious too!

    Thank you Sho for another good video. I dont like pork belly, so I wont be trying this dish. But I like the idea of miso soup with cabbage, so I will try this out. And I always enjoy watching your videos, because its like taking a tiny trip to Japan ;-).

      Thank you again for your comments. Pork belly has a lot of fat, so I actually get an upset stomach if I eat a lot of it. Thanks for enjoying my cabbage miso soup. Since the only ingredient is cabbage, the key is to add more cabbage to bring out the vegetable broth.

    I really enjoy your show as you keep it simple and I can understand how you organize everything. And thank you to the gentleman who helped out with a list of the basic products to have on hand for cooking. It really helped me out. Totally enjoy pork belly, my freezer has a lot available. Do you know anything about how to make pork belly "burnt" ends? It appears to be increasing in popularity where I am. If you make it could you possibly do it on a show? Thanks, really enjoy adding your dishes to my meal plan.

      I totally agree - I also like this channel, as the dishes are simple to prepare and dont need 1000 different things ;-). Also, its relaxing to watch, with good instructions, and nice ideas for side dishes (I especially like the soups). Sometimes, getting some ingreditiens (vegetables, mushrooms, a special kind of ginger, shiso leaves) is not possible in Switzerland. But I can usually find something similar.

    Hi Sho, I love water spinach (its also called morning glory in some asian countries) and thats someting that is unfortunately quite difficult to get in Switzerland. I am not a big fan of Japanese curries, but I absolutely love Thai curries. I am not sure if you get authentic Thai food in Japan ? If yes, do you like Thai curries ?

      Hi swissfoodie3542, thank you for your comment. Water spinach is not sold very often in Japan too. I bought it because it was sold in a supermarket, which was rare before I took this video. Often water spinach can be found in Chinese restaurants in stir-fries. I too like water spinach and would be happy if I could find it in supermarkets more often. About Thai curry, there are many Thai curry restaurants in Japan and I like Thai curry too. However, I feel that many Thai curry restaurants are arranged for the Japanese. I would like to visit Thailand someday and try authentic Thai curry.

      @@Japanese_homecooking_sho It is the same here in Switzerland - the Thai curries that you get in restaurants, are adjusted to Europeans, and not authentic. I usually prepare it at home, and make it like pretty authentic.

    I have never seen Somen before. This dish looks perfect for hot summer weather. Do you also sometimes eat Somen in a warm dish, or is that purely for cold dishes ?

      Most somen noodles are eaten cold. Eating cold somen on a hot summer day is a summer tradition. However, in some regions, somen is eaten warm. Also, although few restaurants specializing in somen serve hot somen. Warm somen is served in a soy sauce-based bonito or kelp broth, similar to udon or soba.

      Thank you both for your comments. The somen noodles were actually given to me as a gift. Somen in general is sold in the dried noodle section of supermarkets, just like soba and udon.

    That looks tasty, thanks for sharing Sho. For christmas eve, we always enjoy "Fondue chinoise" (meaning: chinese hotpot) in our family. You can prepare everything in advance, and than its a very social dish, where you can take your time. There is a stove in the middle of the table, with a tasty broth simmering in a fondue pot. There, we cook very thin slices of beef, shrimps, scallops and veggies like mushrooms and broccoli. And when there are done, we dip them into a sauce of mayo with herbs and garlic / or mayo and curry / or mayo with ketchup etc.

      At the end, the broth is even more flavorful, because of all the things that were cooked in it. So if you are not completely full, having an egg cooked in that tasty broth is great. I am usually completely full, so I enjoy that on the next day.

    For some strange reason, Okonomiyaki is one of the very very few foods, that I dont totally enjoy in Japan. I dont know why. After watching this video, I think that on our next Japan trip, I should try this again, to give it another chance.

      I'm sure you'll like it if you try their delicious okonomiyaki... Restaurants that serve okonomiyaki often also offer a menu called monjayaki. Monjayaki is difficult to explain, but it is a kind of watery okonomiyaki that customers make themselves on the griddle right in front of you. Some Japanese people do not like monjayaki, but I think it is an interesting food, including the entertainment aspect of being able to eat it while making it.

    Tempura is one of my favorite Japanese dishes. But its something that I would never do at home. I never deep fry anything at home. If I want something deep fried, like french fries or tempura, I will always get it in a restaurant. I dont like handling so much hot oil, and also I dont want the smell of it in my apartment.

      I would think that there are many Japanese families who do not fry tempura at home. It is available in many restaurants, and even supermarkets sell it cooked. After this shoot, my house smelled like tempura for a few days.

    Hi Sho, I am preparing for my 4th trip to Japan next february and march, and for that I like to watch food videos from Japan. So now I am watching some of your older videos, which I didnt see yet. This recipe looks really tasty, I guess its a stew that is popular in winter time ? Its also something that I have not seen on a menu in a restaurant, so probably its done at home ? Here in Switzerland, we also have dishes that are not usually served in restaurants, but only at home. The most famous swiss dish in my opinion is cheese fondue. You can get that in restaurants, but I (and most swiss people are the same) will do this only if I really need to do it (for example, when we invite a partner from work from another country for dinner). Otherwise, cheese fondue is only prepared at home, and thats the best way to enjoy it.

      Hi, thank you for your comment! Traveling is fun when we plan and prepare for it, isn't it? Meat and potatoes is a classic home-style dish. Depending on the family and region, carrots are added or daikon radish is added. It is not often served in restaurants, but can be found at standing izakaya (Japanese style pubs). Cheese fondue sounds delicious! There are restaurants in Japan that serve cheese fondue, and even supermarkets sell home made sets, but probably not the Switzerland flavor. Someday I would like to go to Switzerland to try cheese fondue.

    I dont usually eat lamb, but this looks really tasty. I keep forgetting that you are from Hokkaido, where "Gengkis Khan" is a popular dish. I "know" it in the restaurant version from a channel I like to watch, from a Brit who lives in Japan since over 10 years (Abroad in Japan). And now, thanks to you, I also know how to prepare it at home. For the salad (cut lettuce), you dont use any dressing ? Not even a simple one of salt, pepper, vinegar and olive oil ? For me, that would like eating grass 🙂

I think lamb is served in restaurants with grated fruit such as apples or bananas, but it is hard to prepare those at home, so I think commercial Worcestershire sauce would be a good substitute. I often eat cut lettuce with commercial dressing. On this day, I substituted the salt from the Genghis Khan for the dressing.

      Hi, thank you for your comment! I don't know what vegetables you have available to you, but you can substitute peppers, bell peppers, asparagus, etc. Any other vegetable that can be cut into long, thin strips and cooked quickly would be delicious.

      Thank you again for your comments. I think fisherman's tartar can be made with any blue fish available in your area (such as horse mackerel or sardines), not just yellowtail. I too love raw fish and mushrooms!

      @@Japanese_homecooking_sho Have you ever tried Ceviche ? This is a dish from Peru or Mexico, but you get it almost everywhere in Central and South America. Its raw white fish filets cut into small pieces, mixed with cut tomatoes and red onion (same size as the fish), and plenty of cilantro. Add salt and pepper. If you want to make it "tropical", you can also add fresh mango or pineapple. Just before eating, mix it with plenty of lime juice. Thats really tasty, and really refreshing on warm days.

      @swissfoodie3542 Thank you for telling us about Ceviche. I have heard about that dish but have never eaten or made it. The lime juice and cilantro sounds very refreshing and a perfect summer dish. I would love to make it, but unfortunately my wife is not a fan of cilantro. I'm sure it could be made with Japanese herbs instead of cilantro, so I'll definitely try it if I can find some good fish on sale.

      If you like cilantro, make two portions, one with cilantro for you, and one with parsley for your wife. It will be not the same, and not as tasty, but I understand that a lot of people dont like cilantro.

      Thank you for your comment. Eggplant and oil go well together, making it delicious. The key is to cook it down well. By cooking it down, the flavor soaks into the inside of the eggplant and it becomes delicious.

    That looks like a really nice meal, thank you for sharing. In Switzerland, we have ready made Teriyaki, in bottles like soy sauce. Would it be okay to use that, instead of making the sauce myself ? Or would the dish change completely ?

      Thank you for your comment. The teriyaki was very good. I don't know what ingredients the teriyaki sauce sold in jars is made from, but I think you can make a similar dish with it. Generally, such sauces tend to be sweet (lots of sugar), so if you have soy sauce at home, I would suggest using teriyaki sauce and soy sauce together. However, to avoid it becoming too salty, use less teriyaki sauce and add more soy sauce to make up for it.

    Love the recipes, it will be fun to replicate them. One small advice, maybe change the music, it's pretty annoying and doesn't match with the vibe of the video. Cooking sounds are natural and very soothing and I think you can gain more subscribers when the video is 100% enjoyable

We are trying to figure out if we should continue with our current method or if we should deliver only cooking sounds like ASMR. We will keep trying to upload videos that will please everyone more.

    Thank you Sho for another very good video. The grilled beef and miso soup looks really tasty. However, the pasta salad is not like I would prepare it and how I like it. I like pasta salad a lot, especially when its warm (not the pasta salad, but the wheater), and there are so many things that you can put in it. However, for me, the only thing that should be cooked, are the pasta, all other ingredients should be raw. This could be tomatoes, cucumber, peppers, radishes, olives, paprika, mozarella cheese, feta cheese, tinned tuna fish, capers, nuts, pomegranate seeds, watermelon, parsley, basil, tinned sweet corn and much more. For the sauce, olive oil, white balsamic vinegar, salt and pepper.

      Thank you for your comment. The warm pasta salad sounds delicious. In Japan, cold pasta salad is the major type of pasta salad.There are macaroni pasta salads, and there are noodle pasta dipping salads.

    I have a question concerning your eating habits: I assume that you and your wife are working. So probably, for lunch you will have something small like an onigiri or a salad, or go for some ramen or something like that into a restaurant. And than for dinner, you have a proper meal, with a main dish, a soup and a salad ? Its the way I handle it. For lunch, I either grab a take away, or go for a light lunch with a colleague from work, or bring leftovers from home, to heat it up in the lunch room. And for dinner, I prepare a proper meal.

      You're right. I eat rice balls, bread, and cup noodles for lunch on work days. At dinner, we prepare a meal like the one in the video. However, in reality, some days it is difficult to prepare several side dishes after work. So, I often shoot videos on my days off.

    This looks like a very tasty dinner, I wish I could enjoy it ! Sadly, its impossible to get a lot of the ingreditiens you use here where I live (for example japanese mushrooms, like maitake, or the fresh japanese ginger). We have almost no japanese living here, so I guess the demand is not big enough. For asian ingreditiens, the best choice is for Sri Lankan food, as a lot of tamil refugees are living here, and also Thai food. And its also easy to find Turkish supermarkets.

      Thank you for the comment. I see that fresh ginger is not sold very often. Turkish food is very tempting. I would love to visit there once, as the food and culture is a fusion of European and Asian cultures.

      I made this and substituted the mushrooms and tofu with sliced onion and two cloves of garlic, minced. Hope that helps a little 😊

    Nice recipe, thank you for sharing. I like to steam fish in foil in the oven. For example filet of trout, with fennel, herbs, slices of lemon, pepper and salt. Or a filet of salmon, with small baby potatoes, lemon zest, salt, pepper and garlic. There are endless possibilities.

    Thank you very much for another really nice video ! Your great work is very much appreciated. I like Bento boxes, and when we take a Shinkansen during lunch time, we always get a Bento box at the station. I love to choose a box, with many small dishes, so that I can try many things. Sometimes, I dont know many of the small dishes, but I like to discover and try new food. The only is thing that is strange for me, is that the food is cold. Because this kind of foods should normally be hot (but of course I understand why they are cold, and the taste is still delicious).

      Thank you again for your comments! When we take the Shinkansen, we buy what we call ekiben, or boxed lunches. I, too, like ekiben with many small dishes. It is true that sometimes I think it would taste better if it were warmer. Recently, some ekiben are equipped with a chemical reaction that generates heat. Such ekiben are usually made with a single ingredient, such as beef or pork bowl, but it is nice to be able to enjoy a warm ekiben on the Shinkansen.

    I cant imagine the taste of the whitebait that you put over the pasta. Do you sometimes use grated parmesan cheese instead on top of the pasta ? Here in Switzerland, cheese is very popular (there is a lot of cheese which is made in Switzerland), and in my experience, its not so popular in Japan, is that right ?

      Thank you for your comment. In Japan, pasta with minced meat in tomato sauce is called meat sauce pasta, which is topped with grated parmesan cheese. At home, we use Parmesan cheese that is sold grated, rather than grated chunks. You are right, cheese is not that popular in Japan. Cheese is rarely used in Japanese food, so it is only used when eating pizza or pasta. I think cheese is more expensive in Japan than in Switzerland, so it may not be that popular. Recently, I think that opportunities to eat cheese are gradually increasing, such as adding cheese as a topping at beef bowl restaurants and the establishment of cheese specialty restaurants.

    Thank you for sharing another good looking recipe with us. When I use chinese cabbage, I use it raw, because I like the light and crunchy flavour & texture. I like a salad of cooked shrimps (cold), shredded chinese cabbage, thin rice noodles and herbs like mint or coriander. With a dressing of soy sauce, fresh chili, lime juice and a little bit of honey. You can also sprinkle some toasted peanuts over the salad, or add crunchy radishes etc.
