    I want to love this mixer and purchase but really am not sure if it's quite right for making pizza dough. I'm not sure if the hook is maybe shaped a bit different or the bar is too far away from the hook but it seems like the dough gets wrapped around the hook too much like my loathed KA mixer! After seeing Famag and the KYS Pro Baker I'm just not sure this is right for me. I really like the idea of it with the tilt head but maybe the extra cleanup time is a better idea in the long run with the KYS 7+ at a similar price point?

      I'm not an expert but see what suits you best. Small amounts won't be able to mix. I use KA for that. Only bigger batches I mix in the mixer. So far I had no issues at all and I love it

      I love it! We just used it this weekend twice. This time I used it to mix the meat for sausages. 5minutes and meat is ready! Also 2-3 weeks ago I did another batch of bagels and had zero issues. For my home needs it's over kill haha, but it's nice to know that this investment will last me lifetime, my kids and grandkids for how much as we use it

      It's not slow. It's quiet because of DC motor and it's belt driven

    Where did you purchase your mixer. I'm in the US and can only find it in Canada.

      They do sell this in Canada, it's their own product, but as far as I know they already should be shipping to usa too. Give them a call or email them. They sent me the mixer from Toronto all the way to Vancouver, for only $100~ Phoenix food equipment, Toronto.

    what seems to be the optimal amount of dough? I would be putting about 1.8kg in it.

      That would be just fine. I made smallest batch 1.4kg and it mixes, but anything smaller I don't think it would work. This machine is for bigger batches. Usually if I make 3-4 loafs about 600g each and it's fine. Hope that helps!

      @@westcoastcharcuterie What do you think using 1Kg of flour only. That is my average as per specs is more than the 10% minimum but slightly below the 30% ideal as per the specs. The total batch would be 1.7Kg with the water of course but that is my average

      Someone asked that earlier and I can say I'm very happy! I've been using it mostly for my meat mixing, and had zero issues. On the other hand, I noticed that after mixing tough dough for 8-10min my bowl usually unscrews itself from the friction and seller offered me full refund and free return shipping for the mixer, but I decided to keep it and I'll just diy small little lock in the future. Others mentioned that they never had this problem so maybe it's just my mixer 🤔

      @@sean9535 otherwise it's great machine, no issues with motor or controls at all so far. That is the most critical points! No rust or any other issues, everything is super solid, commercial grade stainless steel, really tough machine! Hope it helped !

      @@westcoastcharcuterie Do you expect the DIY lock to be a big project? I'd only be using the mixer for dough and I ordered a Famag IM-5S from PHG, but now I'm considering cancelling for this since it's such a better price.

      @@JacKAsterisK not really and I've been using it since without any type of lock, been going strong and fine! Maybe it's just my mixer, other guys mentioned that they never have an issue. So far it works like a champ!

      Haha it beeps loud for sure! To be honest I don't mind few seconds of loud beep then 10minutes of tractor noise in the kitchen, lol. You can also disconnect the beeper or tape it up to make it more quiet, but it never bothered me to be honest.

    I am contemplating about getting this mixer (versus Kys). Is it possible to turn off the beeping sound when the machine ends the cycle? I actually find it annoying.

      It's been great and honestly that beeping sound only beeps when it's done and that's it. Specially once you set it and get on with your other things it helps to notify when it's ready. I'm sure you can disconnect the buzzer wire unless it's welded into the board, then maybe tape it over to make it more quiet. I never had an issue tbh.

      @@raminolta so far very happy! I had an issue with bowl locking, but they offered me to send it back and maybe replace new machine, but I said I'll keep the machine and just going to make my own extra lock. As far as I heard other people don't have this issue. But like I said company is nice, they offered full replacement or refund at no costs! Today I will be actually making some sausages, gonna make a video again too, see how it mixes and how well

      I'm glad it did! I could not find a single video about it and for $20 it's worth every penny! Already used it a few times and netted 2 muscles this weekend. It' so much easier then using pvc pipes, bottles or other stuff. That top cover helps so much to apply the net, grab one!

      @@SS-pi2yi this is just cotton/rubber netting. It's elastic, so it stretches easily and keeps muscles in shape. Also it helps while drying to make more even moisture loss on your product by applying tension all over the product, resulting more even drying and keeping it in shape 👌

    What is actually wrong with connecting fridge directly in to the thermometer?

      It was cooling for too long. Back panel used to cool for about 10minutes and then the temperature used to keep dropping dropping and sucking up the moisture in the fridge, so my humidifier was running a lot more trying to balance and then it overshoots and starts dehumidifying, was constant battle. I installed timer relay and those 3min were enough to drop the temperature and stop running for to long

      Absolutely, it can mix anything you throw at it. Even toughest, dry bagel mixes. Bread or pizza dough will be no issues at all.

      There used to be two versions this one what you see in the video and the XZ-5 which was more better and more expensive. The XZ-5 version is just fine.

      Yes, parts come directly from Phoenix food supply in Toronto. That is where I purchased this mixer and it's their own brand line. They probably started shipping to USA too now, not 100% sure on that, but in Canada is easy to get. Tbh I opened it up and there si not much to it. The tilting head is full re-enforced steel, which is not moving at all when mixing. This thing is full commercial grade, so it's not like Famag or other brands, this is heavy duty work horse and it weights a ton

      @@ironblud I usually run on average 12.5-13°c so that is like 52-53°F I believe. In my experience I noticed that in higher temp the mold and bacteria develops flavours much better then really cold temperatures. If you have inkbird temperature controller, you can easily set up your temperature however you want

    I noticed that you're passing wiring through the door. Is there not a gap being made in the gasket that way? Or you found a solution for it? I have a similar small fridge only with glass door that I'm working on at the moment.

      Yes I just did for both fridges from the side in the bottom corners and it worked great. I didn't want to drill holes and run wires other way. I sold my little fridge, was very easy to remove all equipment and I sold it as perfectly functioning fridge. Did the same with a glass door one. Ran all wires in the bottom corner and that gap is actually so small that nothing ever can get in. Wires are thin, so it never been an issue, doors close properly too.

      Yeah I get your point. I'm not sure if there's tubes in walls of this fridges with cooling backplate, so at this time my greatest concern is that if I drill holes I may kill the fridge. That is why I'm interested in trying to do it how you did. Also my equipment is a bit different but the principle is the same.

That's why I don't want to drill any holes in the fridges.. if something does not work you can always adjust and make changes, but once the holes are drilled, you can't go back.. Another tip, if you fridge is cycling to often, put your sensor in an empty glass bottle

      You was right, I hotglued everything through the door and thickened a bit the area where the gap is, and there's no gap at all now. So far in the last 24h temperature and humidity is constantly in the parameters i initially setup. I'll try to put sensor in a bottle now to see if anything changes, cheers.

      @@hammertiming8423 Yep, great! Keep testing! Don't forget once you start loading fresh products, your humidity will go up to 85-87% but it's ok, it will stabilize after couple weeks and if you getting green mold you will need to install small fan like I did to circulate the air

      @@SS-pi2yi during winter months I can easily go about a month without refilling water and maybe 3-4weeks on dehumidifier, but in summer months or if you have a lot of fresh products it can cut down to 2-3weeks. During summer fridge cycles much more often, builds up more moisture, etc.. but average 3-4 weeks. You can safely go on vacation haha! One thing I would highly recommend is get wifi thermometer and set up alerts, it already saved me once when my fridge died all the sudden! It's extremely useful

Is it a special type of humidifer that one should use in this curing chamger application ? like a cool mist ? or warm mist or ultrasonic or evaporative etc? What type is the one you are using? (or simply make/model # etc) - thanks again!

      @@SS-pi2yi I used the cheapest available haha. Do not buy something fancy, electronic screen etc.. If you ever lose power and it comes back on, you are safe and your humidifier will be back in service. Electronic ones you will have to turn it back on. Simple, cheap things work best in this situation!     In your video the dough didn’t take on the “pumpkin appearance” that the other spiral mixers seem to all have. Was this a function of the type of enriched dough you mixed? Have you mixed lean dough with it, and does the dough develop the classic pumpkin appearance?

      Yes it does. I just haven't mixed it long enough. It takes about 10min to get that perfect pumpkin.

    When you live in Europe it will never beats a Famag in price. First it doesn't ship outside USA and Canada and even if, the taxes and shipping costs are huge. Pity, because it looks and sure sounds like a very nice machine.

      I was looking for Famag and then found this. Famag is almost double the price. This is commercial grade mixer, heavy duty, hard heavy stainless steel. For it to break you really need to throw some heavy work at it. I've been using it for almost anything, meat, bread, bagels, baguettes, so far it's been great! It's quiet, runs on DC motor which has a nice soft start and slow down, different speed levels, timer and for $1300cad with tilting head, I'll take it! Not even close to Famag price and their internal parts. This one is extremely quiet which I love too

    Ridiculously overpriced, between $2500 and $2700. Only available through one distributor who has an exclusive on sales in the USA. Gouging? Absolutely. Better and less expensive spiral mixers made in Italy, can be found all over. Trust me, the spiral mixers made in Italy are the best, built like tanks, they never die.

      Sorry to hear, but I've paid $1,300 door to door for the service when Famag was almost double that price and so far I've been quite happy with the mixed, what ever I used it to mix dough for bread or for bagels or even meat it did just fine so for $1300cad I will take that deal any time and it's commercial mixer, not home style mixer, all the parts are solid steel and heavy duty. Like I said in my case is the best price/product/quality option 🙂

      ​@westcoastcharcuterie I like this mixer. It's $750 for 10 and $900 for the 10T. "T", meaning tilting head. I think it's a great price for either one of them. So the only difference separating the 2 in price is the tilting head with removable bowl? I looked at the specs on both of them and it looks the same except for that. I was also looking at Vito Iacopelli's Authentico mixer from Italy and it's $995, no tilting head , you can't remove the bowl and its 7.5 quarts.... I can get the Alpha 10 for under $1,000 with shipping and tax here in Calif. $300 cheaper than Vito's. Another question, they say if you use your mixer alot to get the non tilting head because of wear and tear. Have you heard of this?

      @@alge3399 sorry but I'm not some mixer guru haha. I use this mixer by all means, I can make 12 bagels at the time, that is how many I can fit in my oven and I did biggest load 8 loafs of bread, which I had no issues at all. This tilting head mixer I think it will last a lifetime. It is super thick steel, heavy duty commercial grade so I'm sure you will not experience issues with that. To be honest I would probably go with tilting head mixer any time of the day specially for home use. It is huuuuge difference when it comes to cleaning and removing bowl it's absolutely a breeze.. That was my main thing why I chose tilting mixer. I use it 1-2 times a week, sometimes 3 times, mixing bread, bagels and even meat for sausages. Never failed me

      That is why I choose to make a video and show everyone if it works. I was not able to find any tests or any info online. It works sooo good, it does not heat up the meat and mixes so well, I absolutely love it!

    Great video! Looks like it can handle low hydration dough without issue. Did it heat the dough up very much by the end of mixing?

      No it was fine. I was doing at half speed #5 and it was not heating up. Maybe if going to do a huge batch and very often, then I would recommend to go for non tilting head version, it will be much more durable, stable and solid. They have that in 10qt too.

      My concern is that the dough doesn’t appear to cling the breaker bar as it does in other spiral mixers. Also is there a reverse function? I like the digital timer feature and the silent motor

      @@davidmaclean981 A higher hydration dough and/or larger batch size would probably cling to the breaker bar more readily. I am told there is a reverse function but only the hook reverses, not the bowl.

      If you really looking for some beast and huge batches then I would say get bigger size commercial mixer without tilting head. I never push my appliances to 100% until they break. This mixer I mixed 14 bagels and that is maximum that I can cook at home in my oven so it ticks all the boxes and it's more then I need for home use. Kitchen aid or other mixer don't stand a chance to make 14 bagels. No reverse function and tbh I never needed it.@@davidmaclean981

      You are right, but because bagel dough is super tough, dry and very hard to mix that is why it not getting pick by breaker bar. Other doughs work just fine.@@simonf4631

    I myself bought a Vervor 15lb manual sausage stuffer. It has literally made 5000lbs of sausage with the lions share being snack sticks. sometimes you get the best of a fair product. I
