My Mom made these for us as children. Filled with chocolate, vanilla or coconut cream pudding. Lemon curd for my Dad. Thank you for taking me back many years.
This brought back a wonderful memory for me. My mom made these all the time for our family. She finished them off with a chocolate ganache. Wow they were so good. We thought that they came from a bakery. So good! She made them just like you did no pastry bag used. Praying for your daughter to have a speedy recovery.
Years ago 30 plus ! The ladies I worked with had never had cream puffs! But since my children had and I made some for them all the time! I decided to make the ladies some! I made lemon, vanilla and chocolate. No cream because of the time ,the night before! I also took powered sugar! Oh boy did that make our break fun!

Lol..How you were able to not eat one right after filling it amazed me..I absolutely love cream puffs! My MIL taught me 35 yrs ago on how to make hers -years before YT ..her filling was 1/2 vanilla pudding and 1/2 whipped cream mixture ..Im glad to watch your video because I just hand mixed the dough meaning after I whipped the devil out of it to form a ball I then mixed the heck out of it by hand after each egg mixture…now I remember why I haven’t made them in years because of the work that is involved and I have torn rotator cuffs so very painful for me..Thank you so much.

I was born and raised in Paris France. I go back and fourth to France and I never miss a walk to the boulangerie or patisserie. However they are different. The shape is somewhat 2-3 inches long not round ,about 6 cm. The filling is a coffee flavored custard or a chocolat custard. The top of the eclair has a glaze also with chocolat or coffee flavor. We call these delicous sweets" ECLAIR." However I enjoyed your presentation. Merci.
Every time I made cream puffs they are gone in 10 min. I like to put pudding in mine. I've made these and froze them (without any filling) to use for a later date. My aunt & sister found them and when I was ready to use them, they were gone. My sister prefers for me to make them over the ones at the stores.

You really don't need to add the powdered sugar, just leave it out.

I haven’t made these for years but I think I put them in a mini muffin pan and it worked great for bite size ones. So good
When my dear mother was living, she made cream puffs and she had to beat it alot.
